Chinese-Style Broccoli Salad

This was really good and tasted authentic (at least as authentic as the Chinese restaurants I've been too). I am a cook who hates to measure and I think I probably over-guestimated the vinegar, so make sure you measure the ingredients as directed for this one. I really enjoyed it and it was very easy to make.

Chinese Chicken Fried Rice II

I made this exactly as written except I used brown rice as I do with everything (well, I forgot to add water to my egg, but that doesn't count). The brown rice is SO good you really should try it. It was delicious and very much like the take-out fried rice I used to get in New York City. The pepper makes it-I ground black pepper over it right before serving and didn't measure it. The recipe should probably state "ground black pepper to taste" as everyone likes different levels of spiciness, right? I will absolutely make this again-and I will never throw away leftover rice ever again.

Chicken Marsala

All these suggestions are very nice-if you want to splurge (on calories) and have a decadent meal. But don't miss out on the chance to try it without all the added fat. I have made this recipe many times and with a non-stick pan you can omit the butter and halve (or omit) the oil and it's still quite good. I've also made it with and without flour, and it works either way. Also, with a thinner sauce, you can slice up some warm French bread and use that to soak up the extra sauce on your plate-yummy and you don't even need butter!

Garlic Shrimp Scampi

This was totally awesome for very little effort. I used whole wheat pasta and I used 1 tbsp butter and 1 tbsp olive oil. I also used 1/2 parmesan cheese and 1/2 Italian seasoned bread crumbs to thicken the sauce (as suggested below) and it worked great. I was out of white, so I used Marsala wine and it was delicious. We halved the recipe as it was just 2 of us, but I could have eaten twice as much, it was so good. I've made scampi before, but from now on I will make it just like this!

Romaine Rice Tuna Salad

I halved the rice, vinegar and oil, kept the other amounts the same, and I used whole-grain brown rice. I highly recommend using brown rice, even if you keep the other amounts the same. Very tasty, I will make again for sure! Next time I will try the spinach and chopped walnuts like another reviewer suggested.

Slow Cooker Chicken with Mushroom Wine Sauce

I enjoyed this more than my husband. My measurements may have been off as I tend to guestimate everything. I found this very tender but a little bland. I will look for another similar recipe in the future

High Temperature Eye-of-Round Roast

This was so easy, I used garlic salt and fresh ground pepper and it had plenty of flavor. The center was quite tender, although the ends were a little tough. I really enjoyed it.

Pork Chops to Live For

I used olive oil rather than shortening. I only had one can of soup, and it was cream of broccoli. One can was plenty for our tastes and probably cut the sodium in this dish by 1/2. It was very good. 4.5 stars. If you have the time after work, I would make "Baked Pork Chops I" instead. It's basically the same recipe, but you bake the pork chops for about an hour instead.

Delicious Ham and Potato Soup

So good. I skipped peeling the potatoes (used red) and substituted carrots for the celery. I also cut the butter in half and didn't miss it. Even with 1% milk it came out thick and delicious. Yum!

Green Bean Casserole I

Let's be real. This is just average. If you like average, salty, fattening veggies, this is for you. Even for special occasions, we can do better than this. I guess for me this one is just not worth the calories and the artificial ingredients are probably worse than the fat content. Does anyone know how to make this with natural ingredients?

Roast Chicken with Rosemary

I gave this 5 stars, but actually I really used a lot of tips from these reviews. I rubbed the outside with olive oil/black pepper/garlic powder/rosemary and I stuffed the cavity with lemon, onion, garlic, and rosemary sprigs. Delicious! The leftover chicken can be used for chicken soup(see Quick and Easy Chicken Noodle Soup) or casserole. I'm so glad I tried this recipe! I also want to point out that I made it without salt, and it was still amazing, so it's perfect to make for those who are on a low sodium diet.

Baked Pork Chops I

These were restaurant quality pork chops. I used cream of broccoli soup (the only Campbell's cream soup I could find with out MSG.) (Be careful if you are adding extra cans of soup-the sodium content is really outrageous.) These are the pork chops I've been trying to make for years. Yummy!! I've made this 4-5 times and it gets better every time. I used Marsala wine this last time and it worked just fine.
