Szechwan Shrimp

Very easy, healthy, fast and the hubby loved it! I added veggies and stir-fried for maybe five minutes and then added the shrimp. Probably would be too spicy for kids.

Spaghetti Carbonara II

My hubby and I devoured this. I did not use the 2 tbsp bacon fat but probably doubled the olive oil instead. Left out the wine since we didn't have any.

Blue Cheese Burgers

Brown Rice, Broccoli, Cheese and Walnut Surprise

This is a delicious combination. The only veg I had in the house was canned green beans so I used those instead of broccoli and it was great for a quick, healthy, vegetarian meal.

Curried Coconut Chicken

This was just okay for me. Not nearly spicy enough to be called even mildly spicy. I will add basil to the leftovers, maybe some green beans or green bell pepper, and some crushed red pepper and see if it improves this to the rating it has been given.

Slow Cooker Chicken Taco Soup

Very good, kind of reminded me of a similar soup at Chili's, but better. I left out the beer and a can of beans and because of that it was a really spicy, but still good.

Chicken Tortilla Soup V

Oh my, this is really good!! I borrowed a couple of suggestions from other users. I placed everything except the corn into a slow cooker for 6 hours on low. I then shredded the chicken, added the corn, and added half a cup of black beans (canned, rinsed and drained). I cooked it for about 30 more minutes in the slow cooker. I served this with shredded cheddar cheese and sliced avocado as toppings. Next time I will add cilantro. It was perfect for my taste and I will make this again and again. Edit 1/20/12: I made this on the stove top with leftover cooked chicken and it all came together in about 30 minutes - pretty impressive! We loved it, but with the chips it was pretty salty. I think I would change the lemon to lime next time, and use low sodium chicken broth OR home made baked tortilla chips with less salt.

Easier Chicken Marsala

I made this recipe as is, with the only possible exception that I didn't measure anything, just eyeballed everything, and probably doubled the wine. It was delicious and I served it with French bread which we dipped in the extra sauce. This is an easy, company-worthy meal, and rather inexpensive. I will make this often! All the other reviewers' suggestions sound yummy too. I think if you simmer chicken and mushrooms in some wine, you can't go wrong.

Pork Chops with Tangy Honey Sauce

I thought the flavor was good and the chops were tender, however the sauce did not "reduce" for me at all, even after doubling the baking time. I wouldn't recommend this dish.

I used Dyann's suggestions to make this a little healthier and my hubby and I enjoyed these very much. The first time I made these, I used cream of mushroom soup and I will go back to that next time. This will be one of my regulars.

Chinese-Style Broccoli Salad

This was really good and tasted authentic (at least as authentic as the Chinese restaurants I've been too). I am a cook who hates to measure and I think I probably over-guestimated the vinegar, so make sure you measure the ingredients as directed for this one. I really enjoyed it and it was very easy to make.

Chinese Chicken Fried Rice II

I made this exactly as written except I used brown rice as I do with everything (well, I forgot to add water to my egg, but that doesn't count). The brown rice is SO good you really should try it. It was delicious and very much like the take-out fried rice I used to get in New York City. The pepper makes it-I ground black pepper over it right before serving and didn't measure it. The recipe should probably state "ground black pepper to taste" as everyone likes different levels of spiciness, right? I will absolutely make this again-and I will never throw away leftover rice ever again.

Chicken Marsala

All these suggestions are very nice-if you want to splurge (on calories) and have a decadent meal. But don't miss out on the chance to try it without all the added fat. I have made this recipe many times and with a non-stick pan you can omit the butter and halve (or omit) the oil and it's still quite good. I've also made it with and without flour, and it works either way. Also, with a thinner sauce, you can slice up some warm French bread and use that to soak up the extra sauce on your plate-yummy and you don't even need butter!

Shrimp Scampi III

This was totally awesome for very little effort. I used whole wheat pasta and I used 1 tbsp butter and 1 tbsp olive oil. I also used 1/2 parmesan cheese and 1/2 Italian seasoned bread crumbs to thicken the sauce (as suggested below) and it worked great. I was out of white, so I used Marsala wine and it was delicious. We halved the recipe as it was just 2 of us, but I could have eaten twice as much, it was so good. I've made scampi before, but from now on I will make it just like this!
