Chicken Taquitos

I couldn't get the tortillas to stay rolled long enough to fry them. I even tried 2 different packs of corn tortillas with no luck. I may try this again but first steam the corn tortillas before even attempting to roll them again. I ended up throwing away 1/2 a package of corn tortillas. :o( Attempted again, this time I steamed the tortillas first so they would roll easier. However, when I put them in the oil, they stuck to the bottom & ripped apart. So I decided I could bake them instead so I steamed each tortilla, sprayed the bottom of a glass baking dish with oil and sprayed the tops of the tortillas with oil as well. They came out just right and were very good. I placed some shredded cheddar cheese on top of them at the very end of baking time. I baked them about 10 minutes, but didn’t actually time it exactly. Served with tomatillo salsa & sour cream & Mexican rice.

Cornish Game Hens with Rice Stuffing

This was a great recipe. My boyfriend, who had never tried cornish game hen even liked it. I did the following: Added a tbsp. each of mushroom & celery & 1/8 tsp. of garlic (in jar). Also threw in ½ tsp. fresh rosemary leaves in step 1. Added pepper, garlic powder, onion powder, lemon pepper, & poultry seasoning in step 3. Turned heat down to 350 degrees 15 minutes after start. At step 4, I added ½ cup chicken broth (for 2 servings). Served with additional rice (was a kroeger wild rice with seasoning package box), steamed broccoli, & green beans (from can) with butter, salt, & pepper.

Bill's Smoked BBQ Baby Back Ribs

This is mostly my mistake in that I didn't notice they were to be cooked on a smoker. However, I have to make the comment because someone out there like me may make the same mistake. In order for this to be as good as previously reviewed...you need a smoker! The grill, wood chips, etc. just will not do it justice. My advice, if you don't have a smoker stay away from this recipe but if you do have one, I wish I could be invited to your next bbq because I'm sure it's a lot better than mine turned out! :o)

Bacon Jack Chicken Sandwich

5 stars! Definately a keeper recipe! I used mayo and some spicy brown mustard as additional condments and my boyfriend used Baby Ray's BBQ sauce. He thought this was the best chicken sandwich recipe he'd ever tasted and since I'm not the big chicken breast on a sandwich fan but still loved it...it gets 5 stars!! Thanks for your recipe!! :-)

Natchitoches Meat Pies

Used Old bay seasoning in place of Cajun seasoning at end of cooking meat as well as the garlic powder. Definitely cook via oven over fry method. Started out frying and then discovered could of baked so finished via baking. Served with garlic mashed potatoes,fruit salad, & stuffed peppers.

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

I skewered on some green & red bell peppers intermittently along with the steak. I used Ribeye in place of the sirloin. Served with Jasmine Rice (from this site) & grilled pineapple & peaches.

Easy Corn Fritters

Used a lot more flour & a little corn meal tripling it (at 2 servings), in place of potato pancake mix. I also used cream of corn instead of whole kernel corn. I agree with the person who said don’t worry about left-overs, I reheated in the oven at 350 & tasted just as yummy. This does take some time to make, but is well worth it!

Aunt Bev's Glorified Grilled Cheese Sandwich

These are really great sandwiches! Thanks for the post! However, they aren't for someone on a diet! I didn't have any Italian bread so I just used white bread & added a touch of oregano to the egg mixture. I used spicy brown mustard instead of Dijon mustard because I didn't have any & I cut it down to only 1 tsp.

Oven-Fried Ranch Steak

I did exactly as directions called for but this didn't turn out so well, maybe I did something wrong. The cornmeal mixture never really got crispy & seemed really mushy. The taste was fine otherwise. After cooking it the required time I attempted to broil it a little to hopefully take the mushiness out but didn't really work. Thanks for the recipe anyway.

Crabmeat Sycamore

Used imitation crab meat in place of lump. Used baby swiss deli slices (cut finely) along with 1 oz of Mozarrella (cut finely) & some soft Muenster cheese (maybe 1/2 oz or less) (scaled down to two servings. I actually didn't have any milk so I just used a small amount of whipping cream and watered it down a tad. I ended up just mixing the whole thing up instead of layering it. Also added a small amount of finely chopped capers and green olives stuffed with pimentos (no more than 1/4 oz) and a small amount of garlic salt (1/8 tsp approximately). I usually try to make things as called for fot the first time around but since I was out of the milk and didn't quite have enough artichokes I thought what the heck! This dip turned out absolutely fantastic!

Cajun Crab Stuffed Mushrooms

Used Monterey Jack cheese instead of Colby-Jack. Baked in oven for 10 minutes instead of 7 and broiled for 10 minutes on the middle rack. Watch very carefully.

Crab Salad III

I changed this recipe just a little. I didn’t add the tomatoes (was out of them) or green bell pepper. Instead I substituted with green onions. Instead of artifical sweetener, I doubled what it called for for the sweetener & used white sugar. This was absolutely tasty!! Made this for my mom for Thanksgiving, but I got a taste. I'm making it just for me next time. :)

Pork Enchiladas

Used pepper jack cheese instead of chilies and Colby-Monterey jack cheese which turned out to be quite hot so added Cheddar on the top to cool it down and a bit more tomato soup and sour cream (1 full 16 oz tub) and 1 1/2 cans of tomato soup. It was a bit much but it at least covered for 4 servings. Served with Spanish rice.

Authentic Potato Pancakes

I used frozen carrots & onions as well as jarred garlic. Instead of fresh parsley & dill, I used dried. I had to put a bit more dry bread crumbs into the mix. I served this with a Hispanic inspired ham recipe along with Mexican rice mix from Rice a Roni.

Sparkling Grilled Ham

The only changes I made was that I used red grape juice instead of sparkling white grape juice & whole cloves instead of ground cloves. Ended up grilling on a indoor grill pan due to severe weather in the area. Served with baked potatoes and corn. This was delicious! Thanks for the recipe!
