Pork Tenderloin with Creamy Herb Sauce

Used canned carrots, didn’t add until later in the recipe. Doubled the sauce mixture for 2 servings (added ¾ tsp. bacon grease) but not the spices just milk & flour (used half & half in place of light cream). Fiancé felt it could had been less bland. Maybe next time I’ll try some garlic powder/salt or just minced garlic & some onion powder.

Beef and Bean Chimichangas

This was ok but it was pretty easy to cook. Doubled the onions & green peppers & hamburger (2 servings). Used creamed corn because had it in the fridge to use for leftovers. Premade the day before serving. Added Mexican cheese blend to the top at end of cooking time & served with yellow rice. Also I didn't add the lettuce & tomato at the end.

Aimee's Quick Chicken

Cooked some bacon and just crumbled it into bits. Over-marinated it otherwise would had been probably really good. Suggestion don’t marinate more than say 3 hours otherwise its too salty. So all in all this was cook’s error (mine in particular) that made this meal not as good as I’m sure it could be. Will definitely try again – without the marinating for too long! :o)

Saucy Chicken and Asparagus

This was ok, a bit bland for me. I couldn't finish mine but my fiancé ate it. He also commented on how bland it was. It was very easy to make however and my only reason for giving it 3 stars. I won't be making it again however.

Savory Crab Stuffed Mushrooms

Heavenly! These were the BEST stuffed mushrooms I've ever had! I only made a few changes; 1st I used a single portabella mushroom (for a single serving) & imitation crab meat. 2nd I added a touch of salt & lemon pepper. 3rd, I used a dollup of cream cheese at the end along with the monterey cheese. I may had added just a touch more dill weed & lemon juice (I just threw it in, didn't measure precisely). Actually I forgot to use the wine & didn’t use the slices of mushrooms, but still good! Full of flavor! Thanks for the recipe!

Honey Glazed Ham

Very good ham recipe! Just make sure not too accidently get too many cloves in and this will be the best ham ever! Thanks for sharing! :) *UPDATE: Served with Awesome & Easy Corn casserole & Roasted Barbecue Potatoes as well as green beans pan-fried/steamed with bacon & onions.

American Shepherd's Pie

Added cream of corn (only about 1/8 cup), 1/16 cup of canned peas, & about a 1 tsp. of jarred garlic. I had just opened up a can of cream of celery so used that instead of vegetable soup. Also instead of Colby, used American cheese. I just had some that needed used up and decided to give this a try since I didn’t have Colby. These substitutitions were for 2 servings. I had some left over cream of corn and added about ¼ cup of that. The only thing I shouldn’t had done is adding the cream of corn, it caused the mashed potatoes not to firm up during cooking. I'll definately try this again without using the cream of corn of course.

Easy Turkey Tetrazzini

This was absolutely terrible, but I won't blame the person who posted this. I never really liked reheated turkey, to me it always tasted funny. I just thought I'd give this a try & maybe I wouldn't mind the reheated turkey. I guess if you don't like reheated turkey, don't try this recipe, it won't help. :(

Mouse's Macaroni and Cheese

I omitted the bread crumbs at the end. The serving size scaled down to 2 seemed to be off, it seemed more like it was a serving size for 4. I had to add a little more processed cheese & American cheese & some black pepper. I cooked for only additional 15 minutes. Tasted really good, much better than the boxed stuff.

Blue Cranberry Sauce

I made this for my parents for Thanksgiving dinner, but I got a taste before taking it over to them. It was absolutely the best cranberry sauce I've ever tasted! Forget the canned stuff & the jellied stuff - no wonder I didn't like cranberry sauce before, but this was absolutely tasty! I will be making it for myself next time.

Crab Salad III

I changed this recipe just a little. I didn’t add the tomatoes (was out of them) or green bell pepper. Instead I substituted with green onions. Instead of artifical sweetener, I doubled what it called for for the sweetener & used white sugar. This was absolutely tasty!! Made this for my mom for Thanksgiving, but I got a taste. I'm making it just for me next time. :)

Rib Eye Steaks with a Soy and Ginger Marinade

This recipe was alright, but don't think I'll be making it again. I marinaded overnight & otherwise followed recipe to a tee pretty much. The maple syrup (only thing I did change) which I used Mrs. Butterworth's syrup was little too strong for mine or my boyfriend's taste. Was looking forward to trying this out, maybe it would be better with REAL maple syrup.

Authentic Enchiladas Verdes

Added some Monterey jack cheese to the inside of the enchilada & topped with some additional cheddar cheese on the top. Cut down the cilantro added to top & didn’t add anymore onions (my boyfriend’s not into that much onion). I put it in the oven after soaking in oil and dipping into the salsa at 350 degrees F until cheese on top was melted.

Used coriander leaves instead of cumin because I was out & used whole green chili peppers in place of Serrano peppers. Added about an 1/8 tsp. garlic salt as another suggested. I cut the chili powder down to ½ tsp. from the ½ tbsp. called for (for 2 servings) it was still pretty hot. I thought adding about 1/8 cup of onions would help sweeten it up and make the heat a little less noticeable. This did not work, as my mouth and even my esophagus is still burning from just a taste 20 minutes ago. Sorry, this recipe was not for me.

Pork and Pepper Stir Fry

Absolutely fabulous! Thanks for the recipe! The only changes made were I used the small amount of red chili flakes in the marinade & replaced the red chili paste with hoisin sauce. Instead of red bell pepper I used red onions & added some canned bamboo shoots. Also at the end I added a small amount of corn starch. Served with Jasmine rice.

Oven Fried Chicken II

Didn't change a thing. Had to cook a little longer than recipe called for (approximately 15-20 minutes extra. I served it with mashed potatoes, mixed veggies, chicken gravy, & Pillsbury Oven baked French bisquits. Thanks for the recipe!

Despite scaling the recipe down to 2 servings, I tripled the marinade. Used purple Bermuda onions instead of yellow onions. Served with Oregano Roasted Potatoes (on another website) & fried zucchinini. Thanks for sharing!
