Restaurant Style Chicken Nachos

Used tomatillo sauce instead of salsa because that’s all I had. Mixed in a very small amount of refried beans with chicken mixture (scaled to 2 servings). Served with sour cream on the side. Served with cheese quesadillas.

Beefy Hash Brown Bake

I used a whole package of brown gravy (scaled to 2 servings). For mixed veggies, I used carrots, pearl onions, celery, green beans, & mushrooms. Instead of frozen has browns I used Simply Potatoes brand fresh hash browns and browned on as skillet before placing in a dish to go into the oven. These were ok but won’t be making them again.

Creole Chicken I

Used chicken wings instead of thighs (cut off the tips) because that is what I had. Used stewed whole tomatoes (1/2 can) & 3/4th of small fresh tomato also because that is just what I had (scaled for 4 servings approximately). Turned slow cooker on high for part of the time & low for the rest. Added a box of Zatarain’s jambalaya mix to the chicken. The chicken was so moist it fell right off the bone.

Picante-Dijon Grilled Chicken

Zesty Slow Cooker Chicken Barbecue

Didn’t have Italian salad dressing so used 2 Tbsp & 2 tsp. olive oil along with 1 tbsp. cider vinegar & 1 tsp of Italian seasoning spices (scaled to 2 servings). Served with corn on the cob & mashed potatoes as another suggested. Was quite tender & very easy to make!

Slow-Cooker Pepper Steak

Used whole peeled tomatoes instead of stewed tomatoes because I didn’t have any. Also used some yellow bell peppers in place of some of the green bell peppers because I ran out. I put in 2 Tbsp tomato paste with 2 Tbsp. water in and added ½ tsp. of jarred minced garlic (scaled for 2 servings). Also I used ribeye steak. Maybe next time I won't cut into strips first to reserve tenderness.

These weren't the absolute best ribs I've ever had (hence, the 4 star rating) but were very good. I substituted red pepper flakes in place of the ground red chili pepper.

Slow-Cooked Tamale Casserole

Substitions made included stewed sliced tomatoes over diced tomatoes, cheddar jack cheese instead of just cheddar. Served with cheese quesadillas & added sour cream & chives upon serving. Fiance thought it could had been more saucy but maybe it was because I over cooked them, not sure. It was a good recipe & will still will make it again at some time but not the best. Thanks anyway!

Elegant Stuffed Chicken and Asparagus Bundles

Used ¼ cup shredded parmesan & ¼ cup grated parmesan (for 2 servings). Served with steamed broccoli & Pasta Roni Butter Roni Italian noodles. Fiance thought a gravy of some sort would really compliment this dish.

Unbelievable Chicken

I wouldn't say this is unbelievable but it's pretty good! Used ¾ yellow mustard and ¼ coarse-ground mustard with horseradish (out of 1 tablespoon for 2 servings) didn’t have coarse-ground mustard. I also used jarred minced garlic instead of fresh garlic and doubled it. Marinated for 8 to 9 hours. I think I over cooked mine a bit and was a little dry but I was using an electric outside grill - not always the best for exact timing. Thanks for the recipe anyhow and I will be using it again! *Update: Served with Zesty Hominy and Cheese from this site, grilled slices of bread and baked potatoes.

Sour Cream Pork Chops

These were very nice and tender. I used pork tenderloin instead of pork chops. I also added some cream of mushroom soup to the sour cream mixture which added to the flavor and also added about 1/8 tsp. garlic salt (2 servings). Thanks Ami for sharing!

I used about 1/8 tsp. of red chili pepper flakes to add a little kick. Didn’t not cut into 3 sections. Served with package of broccoli and carrots with garlic sauce and buns.

Slow Cooker Enchiladas

This was really good. I changed only one thing, I used 1/3 can tomato soup in place of cream of chicken soup for 2 servings. Actually, there was one other thing I changed as well. I used tomatillo sauce in place of regular chunky salsa. Thanks for the recipe!

Chicken Taquitos

I couldn't get the tortillas to stay rolled long enough to fry them. I even tried 2 different packs of corn tortillas with no luck. I may try this again but first steam the corn tortillas before even attempting to roll them again. I ended up throwing away 1/2 a package of corn tortillas. :o( Attempted again, this time I steamed the tortillas first so they would roll easier. However, when I put them in the oil, they stuck to the bottom & ripped apart. So I decided I could bake them instead so I steamed each tortilla, sprayed the bottom of a glass baking dish with oil and sprayed the tops of the tortillas with oil as well. They came out just right and were very good. I placed some shredded cheddar cheese on top of them at the very end of baking time. I baked them about 10 minutes, but didn’t actually time it exactly. Served with tomatillo salsa & sour cream & Mexican rice.

Vegetable Lo Mein

I'm only giving this recipe a 3 star review but it is perhaps because I made some changes due to the circumstances that I didn't have a lot of fresh ingredients on hand. I was expecting it to be a lot more flavorful but again could of been the changes. Anyway here's what I changed: Omitted green onions because I didn’t have any & used green peppers instead of red peppers & doubled them (for 2 servings). Other changes included canned carrots instead of fresh, canned sprouts instead of fresh, and frozen mushrooms instead of fresh. Added an extra teaspoon of cornstarch to the chicken broth mixture. Used jarred ginger instead of fresh.

Apple Butter Pork Loin

Cook time was totally off. Ended up burning the dish before even getting a dish (scaled to 2 servings). It smelled really good while cooking so I will try again at another time. Maybe I just didn't know how to scale down the time myself but in any rate it was a very burnt dinner. Tried again this time mixed all ingredients and was put in the oven at the same time at 300 degrees F (2 servings).

Steaks With Roquefort Sauce

This recipe was better than I expected & actually turned out quite well. I added a ½ tsp. of minced garlic (in the jar) and added it to the brandy mixture. I used blue cheese instead of Roquefort. Served with buttered egg-noodles. Thanks for the recipe!
