Salmon Chowder

Very good recipe. I followed it closely except for the following slight changes. In the hot stock pot I added 6 slices of diced smokey bacon to crisp. Removed the bacon and cooked the onion and celery in the bacon drippings. I added the chopped crispy bacon back to the pot at the end! I also added a pinch of cayenne pepper and about 1 cup total of grated white cheddar and asiago cheese. Yum.

Bran Flax Muffins

Delicious. I made a few changes just to suit what I had on hand...as one reviewer mentioned earlier, I think you can substitute as you see fit here - just keep the dry/wet ratios the same. I used 1.5 cups whole wheat flour, and the other 1.5 cups of dry flours I combined using oats, ground flax seed, hemp hearts and wheat germ (to total 1.5 cups). I used dried cranberries and a mixture of pumpkin seeds and walnuts. I used 1/2 cup of apple sauce instead of the apples. Really so good and so healthy too!

Macaroni and Cheese V

Very good, I added 2 tbsp butter, with 2 tbsp flour and then the milk. Added a lot of fresh herbs from the garden before baking. Very delicious

Quick Quiche

Good recipe and very quick and easy. I sauted onions, green pepper and fresh mushrooms in a bit of butter to add to the egg mixture and omitted the bacon. I placed grated old cheddar on the bottom of the pie plate and poured the mixture over which turned out great. My only tip - to avoid lumps when you add the flour, stir half the flour with half the milk in a separate cup to create a smooth paste, add that to the egg mixture and stir, then repeat with the remaining flour and milk.

Dumplings

Very good dumpling recipe. I haven't had them since I was a kid and my Mom made them... these really reminded me of the ones she would make! I added dried parsley, ground pepper and fresh basil (about 12 leaves, finely chopped) to the mixture. I had to use a bit more milk then called for. Really tasty.

Chicken Enchiladas V

I have to admit, I only used this as a basis for what I ended up creating! Mine turned out wonderfully...with all of my alterations, but thought I'd share them with you. I mixed 1 can cream of chicken soup and 1 can cream of mushroom soup and added the 4 oz can of green chilies to this mixture. I sliced and sauteed 8 boneless/skinless chicken thighs with 1-2 tsp cumin and 1 tsp chili and 3 garlic cloves. Then to assemble...lay out your 8 inch tortilla, put 2 tbsp soup mixture, a tbsp of cottage cheese, a big handful of fresh spinach, some chicken and top with a bit more soup mixture. Roll it up and place in a 9 x 12 pan that you've added some of the soup mixture in the bottom of to avoid sticking. Repeat - this quantity made 6 tortillas with a bit of chicken left over which I chopped and added to the top. Cover it with cheddar, bake for one hour at 325. Remove foil for last 10 minutes and allow to rest for 10 minutes before dishing up. I prepared this for family - and it was a huge hit. Thanks for inspiring me.

Orzo with Mushrooms and Walnuts

Thanks for the recipe...or atleast the guideline! Unfortunately I didn't have walnuts (they sounded like they would have been delicious in this recipe)...so I did some alterations to kick it up a bit! Added a stalk of celery with the onion and mushrooms, as well as 2 cloves of garlic and a 1/4 red pepper for color. When it was done, I found it a touch bland (wish I would have had those walnuts) so when I found some feta cheese in the fridge, decided to toss that in (about 1/4 cup)...that really did flavor it nicely! All in all, a nice dish (even with my alterations).

Cabbage Roll Casserole

Well I give this recipe this rating because I made so many adjustments! I added lots of seasonings to the beef mixture...garlic, salt, pepper and oregano. I parboiled the cabbage for about 10 minutes, and then when I went to stir in the uncooked rice, I realized I was completely out!!! So, I added a cup of pearl barley instead and I must say, it came out very nice! For the liquid I added 1 cup beef broth and 1 can of water. Also added 2 cans of tomato soup - one stirred in, and one smoothed out on top! My daughter loved it!

Mouth-Watering Stuffed Mushrooms

Awesome and unique! The filling actually will stuff about 20 good size mushrooms so buy more then stated. The parmesan cheese in this recipe seems to "puff" up the filling and the end result is very delicous and quite unique. I've made this recipe several times now and it is the only one I use. Last time I did fry up a bit of bacon and mixed that into the cheese mixture, but to be honest - they are just as good without it!

Absolute Best Potato Casserole

Overall a pretty good potato casserole. However, when I tasted the cheese sauce before adding it to the casserole dish, I found it to be really lacking in flavor so I added parmesan cheese, paprika, a 1/2 tsp of curry powder, a few dashes of worcestire sauce and a small handful of fresh oregano from my garden. That helped alot! I also used fresh cauliflower - about a half a head chopped in big pieces and scattered on top! Nice flavor and smelled great while cooking!

Sesame Pasta Chicken Salad

Excellent even with my alterations! Didn't have sesame seeds so I toasted slivered almonds which gave it a delicous crunchy flavor! Also, as other reviews suggested, I cut the oil to 1/4 cup and used olive oil. Since I didn't have green onions, I used a small handful of chives from the garden and added some diced red onion for flavor. I also added some chunks of cucumber, and I think next time, some bean sprouts would be very good as well. I served it on a bed of garden lettuce. My 10 year old daughter said it was the best salad she's ever eaten, and I plan to make a batch to take to the cottage this weekend! Thank you Olivia!

Jay's Jerk Chicken

Very nice recipe, that I've made twice now. I did omit the green onion the second time as I found the recipe a bit strong in the onion flavor, but I did add several cloves of garlic! Really excellent. After removing the chicken from the marinade, I brought the remaining marinade to a slow boil on the stove top and then spooned it over basmati rice and served it all with grilled zucchini! Really fabulous!
