Creamy Potato Leek Soup II

very nice! i'm a vegetarian and made some changes to the recipe: - used vegetable broth instead of chicken - substituted red potatoes (kept the skins on) for the regular ones - sauteed some minced garlic in oil before sauteeing the leeks - tossed in some bite-size pieces of fried tofu right before serving i also found myself a little broth-less, so i added a cup of hot (but not boiling) water and a dash of garlic powder, salt, and pepper for taste.

Black Bean and Salsa Soup

We (Byron, Zarrin, and a friend) really liked this recipe! Quick and easy to make and we definitely agree with keeping some whole beans with the soup + some lime juice. Next time we're going to toast some tortillas strips and serve that over the soup.

Banana Butter Icing

We love this icing! We would recommend pushing the bananas through a sieve to reduce the amount of black flecks that show up in the actual icing.

Italian Dressing Mix

great mix, but we would recommend using a bit more vinegar for a stronger kick. This dressing is also best used fresh, as the flavour begins to dissipate overnight.

Beef Stew IV

Superb! We totally loved this stew. I recommend cutting everything up into half-inch cubes (esp. beef), that will reduce the cooking time down to about an hour rather than two hours. Instead of garlic bulbs, I used garlic powder. I recommend mixing all of the powders and spices with the flour and dredging the beef with this mixture. I also took the advice of some of the other folks here and used the remaining spiced flour to thicken the stew.

Braised Balsamic Chicken

Byron loved this recipe, despite the fact I accidently left out the onions. We opted to use Balsamic vinegarette instead of the vinegar (didn't have any) and it worked just as well. The only problem is the excessive amount of oil that comes with the vinegarette. Either way, the chicken stays moist.

Gingerbread Men

very popular and a big hit wherever we go. I like my gingerbread with a slight kick, so I added 50% more ginger. I might up the amount of cinnamon too. Also, 1/4" thick cookies cooked over an airbake sheet leave them nice and soft.

Spicy Italian Pork Cutlets

What awesomeness. We substituted white vinegar + 1/4 cup of sugar for the white wine and got a very nice sweet sauce (nobody had white wine). Compliments brown rice quite nicely. We've also added finely minced onions (sauteed before putting in the tomatoes, and after searing the pork), chopped olives (after the pork is added to the tomato mixture). This recipe also works well with garlic powder -- give a light dusting to the pork before it is tossed into the pan and sprinkle in a bit more after everything is sitting in the pan.

Down Home Casserole

A little vague on the directions (use an entire bundle of broccoli), and a little bit too much on some other things. For example, we would use half the amount of sausage recommended, a lot more broccoli, and possibly add a layer of chips and cheese on the top. otherwise, not a bad starter base recipe, but it wasn't quite to our liking.

Creamy Rice Pudding

fantastic recipe. i left out the vanilla by accident and it's still beautiful. especially good with nutmeg. i tried using soy milk instead of regular milk, unfortunately it does not really work out very well since the pudding does not get thicker or cream (i think). after ten minutes of medium heat, there wasn't any thickening, so i added a half cup of whole milk and then the pudding really started to take off.

Easy Pancakes

We like to upp the amount of sugar to 6 tbsp and reduce the veggie oil down to 1 tbsp. makes for less greasy, yum pancakes that don't need any syrup on them!
