Weekend Brunch Casserole

Reviewed: Aug. 2, 2006
Wonderful dish! I used 7 eggs instead of 4 and cheddar instead of mozzarella. I will try with bacon next time to see if it is as good.

Pasta Lasagna

Reviewed: Sep. 6, 2006
Easy to make. Great soccer night dinner. Kids loved it and I was able to sneak a few veggies in the sauce. I used a little more mozzarella for my husband but I'm sure it would have been fine without the extra. I will definately add it to the school/dance/soccer/basketball night rotation.

Pumpkin Apple Streusel Muffins

Reviewed: Oct. 6, 2006
My kids loved these! I did use the entire can of pumpkin and was happy to know that the batter would be really thick ... otherwise I would have thought that I did something wrong. They were wonderful! Thanks for the recipe!

Apple Squares

Reviewed: Apr. 4, 2012
This has become a breakfast staple in my house replacing pop-tarts and cereal bars. My girls also like to take them in their lunch for a treat. I triple the recipe, leave out the nuts and leave off the cinnamon/sugar topping. I bake in 2 9x13 pans and cut each pan into 18 bars. After they cool I layer them in an airtight container and freeze them. In the morning the girls heat them for 30 seconds in the microwave and they are wonderful. If they take one in their lunch it is thawed by lunch time. They are great to have on hand when the girls bring friends home too!
