Cucumber Sandwiches III
Delicous! Definitely cut back on the italian seasoning - taste as you go. And fresh dill makes it work. Note - several reviews said they tasted even better the next day. Therefore I wasn't concerned with making extra for dinner. We had then on rye bread, not toasted. The leftovers were not nearly as good. I'm sure letting the cream cheese mixture sit on its own is good, just not fully assembled.

I've made this three times in under a month. My boyfriend (who doesn't love chocolate the way I do) really enjoys it! Most recently I made it on a trip home and it did not turn out as well. I'd been using large, thick old-fashioned pretzels but this time my mom had leftover skinny stick pretzels for me to use. I crushed them right in the bag. It turned out terribly salty! I think it was a combination of the smaller, less "doughy" pretzels and extra salt at the bottom of the bag. So I suggest always using the thicker pretzels. I had raved to my family about how great the pretzel crust is - how the touch of salt is refreshing - but it was too much for everyone and embarassing. Other than that, a hit!

Carrot Cake III
Fantastic! When my boyfriend saw the recipe, he said, "what possessed person number 1,472 to decide to write a review? didn't they think there were enough?" Well, i'm going to add as well. It's just that good! Also used part applesauce and part canola oil and replaced most of white sugar with brown sugar (ran out of white!). For the frosting I only used about 2 3/4 cup powdered sugar. Had a great cream cheese flavor. My cake also cooked REALLY fast. Done in about 30 minutes in a 13 x 9 pan. It's not the oven - used it a lot. So watch the cake!
