Baked Pork Chops I

Reviewed: Jul. 25, 2006
My husband HATES meats covered in sauces, so I was shocked that he actually really liked this one! My mother-in-law told me that it was "exceptionally good" (high praise indeed!). I used cream of chicken soup instead of mushroom, added fresh mushrooms & 1 tsp. of Worchestershire sauce to the soup before covering the chops. I teamed it with Yukon Gold mashed potatoes & a green bean casserole which really complimented the flavors of this dish.

Easy Minute Steaks

Reviewed: Jul. 25, 2006
A little on the bland side. Also, 1 can of soup left the meat a bit dry. Worth trying again, after tinkering with the recipe. Maybe adding an extra can of soup, more spices, etc.

Honey Ribs

Reviewed: Jul. 26, 2006
I've tried other slow cooker rib recipes & the meat ends up dried out or not tender enough. These were "falling off the bone" tender. The sauce, however, was a disappointment. It was as thin as water! I like my sauce to stick to my meat, so next time I'll definitely thicken it up before serving, as others have suggested. But, very tender ribs!

Mexican Casserole

Reviewed: Jul. 27, 2006
Delicious! My husband doesn't like Mexican casseroles because they're so "heavy", but he thought this one was great! I used Jalapinto beans, Mexican tomatoes & a bit of sour cream & it had enough bite that I didn't need to add any other flavoring.

Chocolate Lovers' Favorite Cake

Reviewed: Sep. 8, 2006
With a house full of chocolate lovers, I was sure this would be a hit. However, it just wasn't what we expected. It was very moist, but too rich, even with the semi-sweet chips. Just not crazy about it.

Tuna Noodle Casserole from Scratch

Reviewed: Sep. 8, 2006
Very good, but honestly it didn't taste much different than my old standby which uses canned soups. Not enough difference to go to the extra work to make this one again, but great for those who are looking for a decent recipe.

Carrot Souffle

Reviewed: Oct. 10, 2006
Interesting take on carrots! Very tasty, easy to prepare, special enough for a holiday dinner side dish! I also tried it w/store bought canned carrots (2 cans) & it turned out just as good!

Diane's Colcannon

Reviewed: Oct. 12, 2006
OHMYGOSH!!! Awesome recipe! My husband, who despises cabbage, LOVED this, as did my kids. I took a few steps to make it a bit healthier, like steaming the cabbage & onions, using butter flavoring instead of actual butter, etc. but the combination was delicious!

Baked Spaghetti I

Reviewed: Oct. 30, 2006
I definitely will not be making this again! No one in our house would eat it. After one bite, everyone pitched it. The mushroom soup ruins the dish. It tastes nothing like baked spaghetti, more like a really messed up tuna casserole. UGH!

Broiled Tilapia Parmesan

Reviewed: Nov. 8, 2006
Absolutely wonderful! I've never found a fish recipe that my fish-hating husband would eat, but he actually LOVED this one! The topping really was a hit. Next time we're going to add some crushed red pepper to give it some heat. Thanks for a great keeper!

Chocolate Caramel Nut Salad

Reviewed: Nov. 27, 2006
OHMYGOSH! My husband, who doesn't really have much of sweet tooth, had to be tackled in order for me to get a helping of this! First time I made it, I used fat free whipped topping & Gala apples, white chocolate pudding & left out the grapes. Unfortunately, it turned out kind of runny, as did another salad I used the fat free topping with. Next time, I used light & it came out great. I also made this w/one 3 oz box of french vanilla & one box of butterscotch instead of the 5 oz. vanilla & it was really good too. It doesn't really look that appetizing, but when I take to a potluck I put a tag on it that says "Snicker Salad" & the bowl gets cleaned out!

Simple Ranchy Breaded Fish Fillets

Reviewed: Jan. 21, 2007
Great flavor, can taste the ranch mix, though my kids all thought it tasted like sour cream & onion potato chips--didn't tell them otherwise because they HATE ranch! My husband doesn't like fish & I've been searching for fish recipes that he'll eat. This is only the 2nd recipe I've found that was successful with not only my husband, but the kids as well! Great!

Spicy Honey Mustard Pork Roast

Reviewed: Jan. 21, 2007
Not a big black pepper fan, so cut way back on the black pepper. This had a really nice flavor that I knew my husband would love. Was really surprised by how well my kids liked it! Even my super picky 7 year old gobbled this down!

Bratwurst, Potato and Cabbage Soup

Reviewed: Jan. 24, 2007
Not really crazy about the bratwurst, but otherwise the combo of the potato & cabbage was very nice. Good base for a potato soup w/a spin, but next time I definitely won't use brats, maybe bacon which would complement the cabbage nicely. There wasn't enough liquid to cook the cabbage, had to add an extra 1/2 c. as some others suggested. Also, was a big bland so we spiced it up w/some seasoning (salt, pepper, dash of Frank's Red Hot, etc.) which brought out the flavors. Well worth making again, but will not follow the recipe as written.

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Jan. 24, 2007
Produced a very moist loin, but we didn't really care for the flavor. Think this would work really well w/a nice cut of beef, but the flavors just didn't seem to mesh well w/the pork.
