Awesome and Easy Creamy Corn Casserole

My husband and daughter really liked this, but both agreed with me that the texture is a little grainy. It might just be the brand of corn bread mix I used (Jiffy) so I'll try a different brand next time we try it. If you like corn, you'll like this dish.

Blueberry Pie

One of the easiest fruit pies I've ever made, so simple to throw together. I've had a problem finding a blueberry pie recipe that is not too tart, not too sweet & was thrilled with this one. The filling sets up perfectly. Followed the directions, but did turn down the temp pretty quickly as the crust would have been too dark otherwise. Next time I'll bake it at 375 instead. Perfect warmed up w/a scoop of vanilla bean ice cream!

Grandma's Green Bean Casserole

Served this yesterday & my family, who do not like traditional green bean casseroles, finished the whole batch! Even my daughter who hates sour cream went back for seconds, which is surprising since it does have an almost overwhelming sour cream flavor to it. Next time I make it I will cup back on the sour cream a bit. I followed the directions given with the exception of sauteeing the onions. Will definitely be making this again.

Sweet Restaurant Slaw

According to my hubby, this was "da bomb"! Said it was the best slaw he's ever ate. Almost identical to mine, but the addition of the vinegar really changes it so everything melds together perfectly.

Roasted Garlic Cauliflower

I've always HATED cauliflower, even when soaking in cheese sauce to disguise the flavor. But, I've got to say, this is delicious! I even went back for a second helping. I prepared it exactly per the recipe, no changes & it was great! My mom couldn't believe it when I said I was actually eating cauliflower now! Thanks!

French Onion Soup Gratinee

Searched all over for a good french onion soup recipe with no luck--there was always something missing. So glad I found this recipe! I've made it twice & it's the best! I made it exactly per the recipe the first time & it was a wonderfully rich, filling soup. Second time I did use croutons. Definitely worth using actual gruyere cheese. The best!

Bacon Mushroom Chicken

Absolutely delicious, decadent entree! Since it uses cream, it's only a once in a blue moon meal, but oh....! Anything that tastes this good usually takes a lot more prep, but this is so quick & easy. The only change I made the second time I made this was to switch to boneless breasts & I also doubled the recipe because it's even better warmed over the next day. Also added a bit more seasoning salt & pepper to the sauce. The mushroom flavor really comes out, so that's a big plus in our book. Also, the fact that I can substitute fat-free half & half for the cream to make a healthier version is great. Just a bit of thickening agent to make it thicker & it's perfect!

Easy Stovetop Peach Cobbler

Delicious, super economical recipe. Doesn't taste exactly like a cobbler, but it's yummy anyway. I've made if w/3 different fruits--peaches, cherries & apples--& all were hits w/my family. I made it exactly like the recipe calls for the first time & it was a little too sweet for us. The next time I left out the sugar & cut WAY back on the cake mix that I put on top. Used about 1/8 of the box, instead of 1/2. Also, I melted the butter before drizzling over the cake mix & it seemed to work out better. When I made it the next 2 times, I used canned cherry & apple pie fillings, & again omitted the extra sugar. I time it so that the dessert is cooking on the stovetop while we're eating supper & when we're done, we have a freshly made, deliciously warm dessert ready for us. Great recipe!

Banana Crumb Muffins

WOW! I hate making banana bread, but I love the taste so these are a great alternative. Very moist, perfectly peaked muffins w/a tasty crumb topping that sets off the flavor. I did add a bit a spice to the batter. One of our new favorites!

Southwest Chicken

Kind of a disappointment. Thought this would be a great lower cal selection, but it was pretty bland, even after adding extra cumin & (lots) of other spices. Needs something to pull all the ingredients together so that they meld & make a multi-layer taste sensation. As it is, the flavors each stand alone & never really come together.

Throw Together Mexican Casserole

OK casserole, but way too bland to make again. Even if I worked with it to get it to be more flavorful, I don't think it would ever knock our socks off. Just not what we'd consider "Mexican". There are lots of other Mexican casseroles on this site that we've enjoyed a lot more than this one. A real disapointment.

Grilled Portobello Mushrooms

Delicious! Not a big fan of red peppers, so I was worried the taste would be overwhelming, but it mellowed nicely during the grilling process. My husband fixed grilled chicken at the same time & they partnered very well together.

Mock Chicken Fried Steak

All 3 of my kids loved this--a rare feat in our household! I substituted ground turkey for the beef & added a packet of onion soup mix. I also needed more than 1 cup of crushed crackers to coat the patties, maybe because of the texture of the turkey. Served w/mashed potatoes & country gravy. YUM!

Mexican Shepherd's Pie

I'm one of those weird people who don't like their food to touch on their plate, so wasn't sure how I'd like these flavors all mixed together, but it was quite good, just needed a bit of tweaking to get more flavor. This is how I changed it up the second time to account for our family's taste & we all thought it was OUTSTANDING! I used 2 lb ground turkey which I seasoned w/garlic powder, pepper & cilantro, substituted a can of tomatoes w/green chiles for the diced tomatoes, used 2 packages taco seasoning, omitted the water & used 1/2 cup salsa instead, used 2 packages Jiffy corn muffin mix & mixed the corn in with the mix. Put a very thin layer of the corn bread mix on the bottom, then layered as directed, throwing in a layer of shredded taco/mexican cheese before topping w/the remainder of the corn bread mix. Garnished w/fresh chopped tomatoes, green onions, black olives & non-fat sour cream to make it more visually appealing.

Brat 'N' Tot Bake

This is a great casserole. Really retains the taste of the bratwurst. (I've tried several other brat recipes that end up tasting nothing like brats.) Hubby gave is his highest praise by telling me to put it into the regular meal rotation. I did cut back on the sour cream & used only 1 cup instead of 2, but otherwise didn't change anything.

Aunt Jewel's Chicken Dressing Casserole

Great recipe! My 5 year old asked if I could make it again the next day! Some other reviews said that it was soggy, but mine wasn't soggy at all--maybe they poured the soups on top of the dressing, instead of on top of the chicken??? Next time I think I'll throw in some veggies too.

Soft Christmas Cookies

This is a really tasty cookie for cutouts. No, it's not sweet (it's not a sugar cookie!--it's supposed to be complimented by a sweet frosting. It's such an easy recipe it makes for a great family project with the kids. These actually came out soft, as advertised, unlike others I've tried. Just be sure to roll them out to the right thickness. The second time I made them, I added 1 tsp. cinnamon & 1/2 tsp. nutmeg to "spice up" the flavor a bit. Will definitely make again!

Amazing Pork Tenderloin in the Slow Cooker

Produced a very moist loin, but we didn't really care for the flavor. Think this would work really well w/a nice cut of beef, but the flavors just didn't seem to mesh well w/the pork.

Bratwurst, Potato and Cabbage Soup

Not really crazy about the bratwurst, but otherwise the combo of the potato & cabbage was very nice. Good base for a potato soup w/a spin, but next time I definitely won't use brats, maybe bacon which would complement the cabbage nicely. There wasn't enough liquid to cook the cabbage, had to add an extra 1/2 c. as some others suggested. Also, was a big bland so we spiced it up w/some seasoning (salt, pepper, dash of Frank's Red Hot, etc.) which brought out the flavors. Well worth making again, but will not follow the recipe as written.
