Grandmaw Cain's Beef Tips and Rice

Very good - a few adaptations - I used beef broth instead of the water & cooked up fresh morels & added them at the end of the cook time. I used Uncle Ben's wild rice & it was delicious!!!

Sugar Cookie Icing

Chinese Cabbage Salad I

Delicious!!! I used a sugar substitute & cut down on the oil to 1/4th cup. I used safflower oil & a Planter's Appalachian mix of nuts, seeds, etc... I mixed the ramen noodle seasoning in with the dressing. Delicious!!!!

Creamy Twice-Baked Potatoes

Made these for Easter dinner. Great! I added some bacon, chopped green onions, shredded sharp cheese & a bit of homemade horseradish. Very good & creamy - unlike other recipes the cream cheese made this one stand-out!

Irish Soda Bread

Delicious!!! I used Splenda & made buttermilk with vinegar. I added cranberries & raisins. Didn't even have to knead it. Will make again with no fruit to have with corned beef & cabbage. Great recipe!!!

First magazine had a real similar recipe but braided. I used frozen bread dough ( 2 loaves) & this turned out great. I baked it 30 min. Much less expensive than the bread stick dough.

Spicy Pickled Crabapples

I halved the recipe. I had to add quite a bit of water ( 1 cup) to the sauce to have enough to cover the crabapples in the jars. My crabapples were yellow & quite small. They simmered for 40 minutes.

Very tasty. I used 2% milk instead of cream, added 1 Tablespoon of caraway seeds. Good way to use left-overs from St. Pat's Day.

Rosettes I

This was my cookie exchange choice this year. I had fun making them. I appreciate all the comments - they helped with the process. I dusted mine with powdered sugar & packed them up. I'm hopeful that they don't get soggy ( as one comment said). I used an electric frypan to cook them. I'll experiment with flavors next time I make them.

Spicy Hot Chicken Legs

As good as our hot wings. Cooked in the slow cooker for 2 hours and then put them on the charcoal grill. I made a batch for the adults and another barbecue one for the children. Put the kids drumsticks on the grill also. Served with blue cheese & celery sticks!!
