Chicken French - Rochester, NY Style

This is the best chicken French recipe I've found to date. I usually make MUCH more sauce than directed (increasing the sherry and lemon juice, and also adding some pasta water) so that there is enough to coat pasta on the side.

Baked Haddock

This is my go-to recipe for most kinds of white fish now. I spray the filets with olive oil (instead of drizzling with butter) before putting in the oven to get a little crunch on them.

Blueberry Zucchini Bread

Beer Dip I

This wasn't nearly as good as I was hoping it would be. I made it exactly as directed. I thought the beer flavor was way too strong, and that it wasn't definitely missing something to balance it out.

Chicken Scampi II

I thought this was a good start, but here are my alterations: Per recommendations, I lightly coated the chicken in flower. I used 5 cloves of garlic instead of 3, per others suggestions, and thought that was good. I used the juice from one lemon - I would actually use 2 next time. Also next time I will add more basil and oregano than recommended - The flavor was good, but I thought it needed just a little more seasoning. With these changes, I think it'll be a 5.

Cheeseburger Soup I

I thought this was pretty good, though I did tweak a bit. I used more beef than the recipe called for, did not use celery, and did not use the milk (I didn't think it needed it). I don't really think it needed the potato either. Also, I used half cheddar and half velveeta. With this changes I thought it was pretty good for a cold-night dish :)

Chocolate Cheese Frosting

FANTASTIC!! The cream cheese in this is perfect - not overpowering, but definitely adds an interesting flavor. I didn't add the cinnamon, but did not miss it.

Sausage-Stuffed Eggplant

This was really tasty. It was a great way to eat some veggies. We used turkey sausage and low-fat mozzarella cheese, so felt pretty good about the dish. Thanks for sharing :)

Tasty Orange Chops

We both really liked this. I made it exactly as the recipe called for. Next time, I will do two things differently: First, I will cut the BBQ sauce in half. To me, the BBQ flavor overpowered all of the other wonderful flavors a bit. And second, I'll take the marinade and boil it down to make a sauce while the chops are cooking. It was delish :)

Grilled Sausage with Potatoes and Green Beans

Oh man was this delish!! We added some eggplant and bell pepper to the mix and eliminated the water (since there is a lot of water in both of those veggies). We also added a little minced garlic. The ONLY problem I had with this was that we didn't make a double batch and we all wanted more! Next time we'll know better! So simple and so hearty - it really hit the spot!

Lemon Cake

This was so easy to make and very yummy! I did as others suggested and used lemon cake and lemon pudding. I used the juice of one lemon (about a quarter cup) in place of some of the water. I didn't have any lemon extract, but used the zest of one lemon. I thought it was good that way :) I might use half of the cool whip last time.. I thought it was too much of the topping.

Best Bruschetta Ever

Oh man - best bruchetta ever is NO JOKE! I made a quadruple batch and it was gone faster than I could cut the bread to go with it! Some said that it was too garlicky, but most thought that it was just right!

Alaska Salmon Bake with Pecan Crunch Coating

I did not eat this but made it for my husband and friends. All said that it was wonderful. Best of all, my husband (who only mildly likes salmon) said that he would have eaten more if it had been there. Definitely a keeper!

Broccoli Rice Casserole

I thought this was really good! I'm not a fan of celery (at all!) but it added a really good flavor to the rice. Next time I might make it a little less creamy, but other than that it was delicious!

Mouth-Watering Stuffed Mushrooms

I took these to a party and got SUCH compliments - they were gone in a matter of minutes (I even made a double batch!). I used 2 packages of baby portabellos, doubled the recipe, and had LOTS of leftover filling. If doubling the amount of mushrooms, I would keep the filling amount the same. But I wouldn't change the filling in any way - it was perfect!!

Garlic Potatoes Gratin

The BEST we've ever had!! BUT - I did make some changes. I started by slowly cooking 1/2 a vidalia onion (chopped) in butter. Once tender, I added flour to make a roux, then added milk to make a thick white (bechamel) sauce. I added salk and pepper to taste. I sliced my potatoes, put one layer in a 13x9" pan, topped with a little salt and pepper, then half the sauce. I topped this with a couple ounces of gouda chopped into cubes. Then I repeated the process: potatoes, s+p, rest of the sauce, and another couple ounces of gouda, then baked for about an hour. I usually make this exactly the same way but without the gouda. Never again will I do this without gouda - it was PERFECT! SO flavorful and a great consistency (I don't like them runny). I forgot about garlic but I don't think it was missed. SO easy and SO yummy!

Chicken and Sausage with Bowties

This was pretty good! The sauce was very thick so I ended up using double the crushed tomatoes. The flavor was good, but I wouldn't mind more garlic next time. Probably will make again!
