Hot Artichoke and Spinach Dip II
Spinach Artichoke Dip has to be my favorite of the dips. I've been looking for a recipe that could become "my" recipe -- one that I would use again and again. In trying to do this, I've used several recipes on this site, and some that are not on this site, but I really do think that I've found it in this one, with some, minor changes to the recipe (thus giving it 4 stars instead of five).
I read through the comments and noticed that quite a few people used a quarter cup of sour cream instead of mayo in the recipe. I've made this twice -- once with full fat sour cream and once with Hellman's Light Mayonnaise and I honestly didn't taste a difference. I'll probably wind up using whatever I happen to have on hand in the mayo/sour cream department next time I make the recipe.
What I did do was I put an entire bag (4 cups?) of mozzarella in (primarly because I use a large baking dish for the recipe and it filled up better that way).
The end result was delicious, and it was incredibly easy to make. I've also found that it reheats well.
