Classic Whole Wheat Bread

Outstanding wheat bread. Like others I found out that the recipe only makes 1 loaf, so I doubled everything except the flour. I started with 2 cups of whole wheat and 2 cups of AP flour, then added just enough additional AP flour to get a fairly wet dough. I added 3 teaspoons of wheat gluten, used brown sugar instead of white, and added 2 tablespoons of dry Italian seasoning. I also warmed the milk for 30 seconds in the microwave before mixing. I mixed and kneaded in my Kitched Aid mixer with the dough hook. Unlike some reviews, I got good rises from both first and second rise. Added: I have eliminated the egg. I mix the dough a little bit wet and the bread has a wonderful soft texture that I love. I make 2 loaves every couple of weeks.

Smothered Beef Short Ribs

Fabulous recipe!! I followed the recipe reasonably closely (I rarely actually measure for dishes like this), and it came out wonderfully flavorful. I will be using the same recipe again next week for a pot roast. This is as good as it gets for wintertime comfort food.

The Best Banana Bread

I've made this several times and it's a great recipe. I even use it with plantain. Using plantain or with bananas which are still a bit firm, I saute them in butter until soft enough to mash. Plantain tends to be a little more fibrous than banana, so it makes a few fruit chunks in the loaf, which for me is all to the good. I also add a teaspoon of vanilla, sometimes some cinnamon or nutmeg. I like to add chopped nuts, but they are so expensive here on the island that I don't bother.

Zucchini Orzo

Great side dish. We had it with our Easter ham. I only had zucchini, so I used 2 of them instead of the yellow squash. Also added some leftover broccoli and a tablespoon of butter melted in the drained orzo. Good light flavor. It would be easy to add garlic or other seasonings to modify the flavor, but I liked it fine as it I made it.

Kristen's Awesome Oatmeal Cookies

Great recipe. I made it with butter instead of shortening, and added 3/4 cup of raisins, cut the cinnamon to 1 teaspoon as suggested. Definitely will make it again.

Classic Dinner Rolls

This is a wonderful recipe. Easy, quick, and the a great light, classic dinner roll. I made them yesterday to go with our Thanksgiving turkey. Everyone raved. I made them in my KA mixer with the dough hook, then hand kneaded for a couple of minutes just to feel the dough. They rose nicely in the time the recipe said and just took about 10 minutes longer in the oven.

Baked Salmon II

This was delicious. I made small modifications to it out of personal taste and necessity. I had lots of fresh basil in the herb garden, and no fresh parsley, so I reversed the quantities (about 1 tb of basil and a couple tsp of dried parsley), and I chopped a whole Scotch Bonnet pepper to add some kick to it (almost mandatory here in the Bahamas). My wife goes through periods where fish just doesn't work for her, but she raved about this preparation.
