Sopa De Lima (Mexican Lime Soup)

Incredibly good! I used 2 small serrano chiles and the heat was perfect for us. Don't skip on the cilantro at the end, it really makes the dish. Reheats well.

Artichoke Spinach Lasagna

A definite keeper. I did pay attention to what other said about it being 'watery'. To fix, I simply simmered the broth with the veggies until it was reduced to just a few tablespoons. Also, I skipped the jarred sauce, and went for crushed tomatoes. I strained out the really watery part of crushed tomatoes with a fine sieve, and was left with a nice thick consistency. I doctored the crushed tomatoes with oregano, crushed fennel, and a little bit of garlic. I used 2 cans of tomatoes, and would probably use 3 next time. Followed the recipe otherwise. I wasn't sure I'd like the rosemary, but it turned out to be delish. The feta was a great choice too.

Mushroom Artichoke Sandwich

I did change the recipe (sort of), instead of using an onion/garlic seasoning, i just added a handful of chopped spanish onion and 2 minced garlic cloves to the mushrooms and artichoke mixture. Is very delicious! I definitely think parmesan is the way to go on this one.

Garlicky Baked Butternut Squash

In my opinion there's 2 schools of winter squash: Sweet and savory. Sweet being the butter-and-maple-syrup-like applications, and savory being the herb and nut application. This dish was an AMAZING savory squash dish, even without the parm. Will try next time with rosemary in place of parsley for a nice variation.

Eggplant Appetizer

Truly delicious! Husband was very skeptical at first, but he was easily won over. Had for dinner atop of broiled polenta slices. Will also try on toasted baguette slices with fresh moz.

Roasted Brussels Sprouts

Well. We love brussel sprouts. A lot. However, we were so disappointed by this recipe. My husband wouldn't even touch them....and that's saying something. I'm sure it's gotten rave reviews for a reason, but not in our kitchen.

Easy Pork Roast

Fabulous. The taste was phenomenal and paired really well with cornbread. A man meal-as my husband says. Next time, however, I'm trying red wine in place of beer and I'll cook it in a deep dutch oven so the meat actually sits a little deeper in the juices. These are just personal preferences. The original recipe is truly wonderful.

Spicy Red Snapper

This was an awe-some dish. We cut back on the red pepper (used 1/4 tsp), added 2x the capers, added some tomato paste for thickening, and served it over rice. The fish was excellant as was the sauce. A definite re-cook.
