As is this would be a little bland for our house, but it is a great base. I added a few of my own touches and it was a hit at my father-in-law's house. First of all, I wanted to use corn tortillas and couldn't find any at my local (very rural) grocery store, so I made my own. I used corn flour, water, lime juice and salt for those. Then to the actual recipe I shredded the chicken (some left over rotisserie and some additional chicken tenders boiled in water to supplement). Then I added a bit of oregano, cheddar cheese soup and cream of chicken soup. Added as well was chili pepper, fresh cilantro, fresh garlic, and since I didn't have enough green onions-some white onions. Sorry I don't have measurements for you, I tend to cook on the fly and just add things until it suits my taste. Cheers! Thanks for the base recipe.
