Blue Cheese Crusted Filet Mignon with Port Wine Sauce

This is soo mind-blowingly delicious! I made this for my boyfriend for Valentine's Day and we both absolutely loved it! This is the best way to cook a steak. I used bone-in ribeyes instead of filet mignon. My boyfriend and I decided that this will be what we will have for Valentine's Day every year, instead of going to an expensive restaurant.

Awesome Chicken Noodle Soup

After making this recipe, canned chicken noodle soup will never quite cut it again! I froze a few servings of the soup for later. I used the lemongrass in a tube that they sell in the veggie section at the grocery store, since lemongrass is somewhat hard to come by in this area. I also cooked the egg noodles in a separate pot before adding them to the soup, and I'm glad I did, because there didn't seem to be a whole lot of broth in relation to the amount of chicken and noodles. I thought that this was a great recipe and it's just nice to know you made the whole thing "from scratch."

This turned out pretty good. I think that the carrots and celery need to be sauteed a little longer before the other ingredients are added, because I had to let the soup simmer for about 1 1/2 hours so they were soft enough. By then, my zucchini had turned to mush. I thought it was tasty, though. Especially for being so healthy!

Angel's Old Fashioned Beef Stew

This was a good starting point for beef stew. I started cooking at 9 am, so the meat was super tender by 3, when we ate it. I added 1 small can of v8, 1 tsp sage, 2 bay leaves, 3 dashes worcestershire sauce, 1 1/2 tsp minced garlic, 1/2 tsp dried rosemary, about 2 tsp more salt, and a little more pepper. As another reviewer suggested, I added about 2 tsp paprika to the flour for dredging. I added my potatoes about 1 hr before the stew was done. I also added a can of sweet peas. As my stew was cooking, it was pretty greasy looking, though it seemed to look better after I added the potatoes. Next time I will cut some of the fat off of the meat. The stew turned out pretty darn good, but I made many alterations.

Marinade for Chicken

This was so good, just make sure you realize this recipe is scaled to make more than 30 servings! I made the whole recipe and had enough for 9 chicken breasts, with some left over! I just put the leftover marinade in a jar, and will use it within a few days of making it. It was very tasty, though.

Marinated Flank Steak

This was absolutely delicious! The only thing I changed was I used balsamic vinegar instead of red wine and it turned out perfect! I marinated mine for just over 24 hours and it was so tender and flavorful. Will definitely make again!

Spaghetti Squash I

I thought this was fabulous. I had never made spaghetti squash, and it was quite hard to cut in half. I added a little water to the bottom of my pan that the squash was cooking in, as another reviewer suggested. I left too much of the stringy stuff that the seeds hang out in when I seeded it, so I had to spend time picking it out after it cooked. I added a can of mushrooms to the onion and garlic at the same time as the tomatoes. This is really yummy and healthy!

Baked Beans II

These are the BEST baked beans I have ever made! I cut the bacon up and spread it across the top of the beans and then stirred them in after cooking. Other than that, followed the recipe to a "T" and got rave reviews! Went very well with pulled pork BBQ sandwiches.

Best Carolina BBQ Meat Sauce

I found this same recipe on a different website and I loved it! I'm from Charleston, SC originally and this is very similar to the sauce they use at a popular BBQ restaurant there. This sauce goes so well with pulled pork, too.

Delicious Ham and Potato Soup

I made this soup for the second time last night and it turned out much better than my first attempt! I used one can of low sodium chicken broth and 1 1/4 cups of water to start off. I only used one boullion cube. I added a can of sliced carrots and a can of corn for color. It was so tasty. Just don't overcook the potatoes, as you will end up with glue instead of soup!! I topped it with some sharp cheddar cheese. Yum!

California Italian Wedding Soup

I love this recipe! I will never buy canned italian wedding soup again. This recipe is too easy to make and sooo delicious! I used ground pork for the meatballs, as another reviewer suggested. Also, I used acini de pepe pasta instead of orzo. I used spinach because my grocery store didn't have escarole. I thought this recipe was just fantastic.

Greek Lemon Chicken Soup

Holy smakerals, is this soup salty! Maybe it was the brand of soup base I used, since not everyone is complaining about the same thing. Using the same brand, I would probably use 6 teaspoons instead of tablespoons. I really love this kind of soup, and I might be willing to give it another try with less soup base, but as it is, I've eaten salt that was less salty than this soup!

This was so good! I used thick cut pork loin chops and it turned out tender and delicious. I let everything marinate overnight. I also used the broiler instead of the grill because it is Winter in Chicago and I don't know about you, but grilling just isn't on my agenda. Delicious, though.

Oven Brown Rice

I was dissappointed by this dish. I cooked it covered for an hour as another reviewer suggested, and it was very soupy, so I cooked uncovered for an extra 25 minutes. It was very salty, and I think there was too much butter. I don't see how this is a healthy recipe when it has that much butter in it. I would use half of the butter called for next time, although I probably won't be making this again. It was almost.....greasy?

Turkey Polish Sausage and Peppers

I love this recipe! It smells so good while its cooking! It tastes wonderful, too. Nice and light, you don't feel bogged down after you eat it. It does take a long time to cut everything up, but its very worth it! I used regular "light" polish sauage, since they didn't have any turkey. Yum yum!

Make Ahead Lunch Wraps

These are pretty good, but they came out a little bland the first time I made them. The next time around, I added about half a packet of taco seasoning to the rice as I was cooking it. I also added some fresh cilantro to the mixture. Next time, I'm going to use a whole packet of taco seasoning for the rice. Good with some hot sauce on top.
