Chicken and Gnocchi Soup

Reviewed: Nov. 9, 2011
I have been making this soup for 3 years now. But not from this site. This recipe is missing something fundamental. Flavour. I would suggest a tsp of thyme. Personally I also had just a hint of nutmeg and a Tbsp of sugar. I would always add these seasonings along with salt and pepper to the veggies once cooked and leave for a minute before adding anything else to let them infuse. Also I would suggest a quick chop to the spinach so you don't get long slimy strings. These changes will make it 5 stars.

Fluffy White Filling

Reviewed: Aug. 18, 2009
I didn't want to rate this seeing as a changed it too much but wanted to share my experience. Since so many complained of the shortening taste I chose increase the butter and decrease the shortening to about a 65/35 ratio as opposed to 50/50. I also used regular sugar which I turned into powder in my mini processor because I wanted the sweetness but not the grainyness. Excellent vanilla is important and I used the white kind which gave me pure white filling. I had some open evaporated milk in the fridge which I think was to old so I used vanilla flavored coffee cream because I didn't want to use milk and that's all I had. The end result was quite nice and I used it to pipe into the center of my blond two bite brownies which sank in the center while cooling. So thanks for the starter recipe. **Update:I made this again and used the evaporated milk called for and I hated it. The flavor from t he evap. milk was overpowering and it made the whole thing very smooth a creamy but not in a good way. I seemed to bring out the greasy shortening taste. I have since lowered my rating from a 4 to a 2 star recipe. Stick to sweetened cream and maybe that will work like the coffee cream did for me the first time.

Sun-Dried Tomato Dip

Reviewed: Apr. 25, 2009
As written the recipe only yields 3 stars. I love garlic and always add more but didn't here and it was strong. I only made a half batch and it was tons. So with one clove of garlic 4oz of cream cheese and half of everything else it was lack except in the garlic flavour. This is a sun-dried tomato dip with hardly any sun-dried tomato taste. In all I used a 1/2 cup of sun-dried tomatoes in my half batch when the original only called for a 1/4cup. That's four times more. Then it was great and everyone loved it though it was still heavy on garlic.

Whipped Mashed Potatoes

Reviewed: Feb. 15, 2009
The most thing to know is that potatoes are like pasta. You should always generously salt the water you cook them in. Everything else about this recipe I thought was pretty standard.

Mom's Pumpkin Pie

Reviewed: Oct. 13, 2008
Not the worst pumpkin pie I've ever had. Even after adding more spices it still lacked flavour...probably because there is not enough sugar in the recipe either. Sugar to pumpkin should be somewhere around a 1:1 ratio for my tastes for a pie. Should have called mom for her recipe.

Heavenly White Cake

Reviewed: Oct. 13, 2008
Will not be making this again. I love almond flavour but I didn't think it mixed well here. It was crumbling apart, not light and fluffy and as others have said is kind of floury tasting. I even got a bit of a cornbread taste from it. Not at all what I was looking for.

Brazilian Lemonade

Reviewed: Aug. 31, 2008
I like this. It's not my favourite but I like it. DO NOT USE THE WHOLE LIME. It WILL be way too bitter/sour. Zest it a bit if you like but peel the rest. After peeling I added the limes, the sugar a 1 cup of water, blended it, then strained it, put it back in the blender the finish it with the rest of the water and the condensed milk.

Scalloped Potatoes and Onions

Reviewed: Aug. 7, 2008
Fabulous. Everyone loved them. I wanted to make sure they were creamy so I did half chicken broth and half milk. Added some extra pepper too.

Strawberry Pie II

Reviewed: Jul. 24, 2008
This is one of my most favourites. I have been making it forever but at little different. I don't mash any berries. Just heap them all in the shell and add a package of strawberry jello to the sugar, cornstarch, water mix after it has thickened. I also make this same pie but with peaches and peach jello.

Perfect Sesame Chicken

Reviewed: Jun. 28, 2008
Loved it!!I followed the recipe to the letter with the exception of frying in olive oil. I used my deep fryer that has vegetable oil in it. Had this few weeks ago from a restaurant and have been wanting it again ever since. The batter didn't heavily coat the chicken at all which was different from restaurant style but still very good. Sesame flavor was perfect. Served which a variation/combination of "House Fried Rice" and "Fried Rice I" from this sight which included some sesame oil as well. Excellent. Thank you.

Spinach Stuffed Chicken Breasts

Reviewed: Apr. 26, 2008
Love it. Have made some changes that will stay. I roll up inside a slice of prosciutto with the spinach and cheese. No mayo. Skip the bacon. I use a skillet to brown on all sides then add 3/4 cup chicken broth and 2-3 tbsp lemon juice cover and let simmer. Skip the oven. Takes maybe 12 minutes remove chicken wraps and simmer a minute longer to thicken sauce, if needed, then spoon over wraps.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Apr. 21, 2008
Very disappointing. Gave it two stars for the pudding idea to keep it soft. First off, no salt in the recipe? Second the dough came out so dry I had to add and extra egg white and 1/4 cup of butter(and I only made a half batch). And third, you can totally taste the pudding it the cookies. Not a fan. Sorry.

Baked Honey Mustard Chicken

Reviewed: Jun. 26, 2007
This is one of our favorites. I would say I follow the recipe but I never measure anything. When chicken is done I remove it from the baking dish turn up the heat and put the dish back in for a minute to thicken the remaining sauce as it is quite watery from all the juice of the chicken , then spoon it over the chicken for even more flavor. Usually serve with herb roasted veggies because the can go in first then cook together.

Chicken Katsu

Reviewed: Jun. 5, 2007
Although wonderfully crispy,as many have said already, this needs more seasoning in the panko. Even my husband said so which is weird. He did however love the dipping sauce I put with it. Just equal parts of yellow mustard and honey.

Hash Brown Casserole II

Reviewed: Apr. 2, 2007
Make this all the time. Usually skip all the melted butter. I don't find it makes any difference and the cheese adds enough oil. There is no need to thaw the hashbrowns just bake for 1 hour instead and since I usually make with meatloaf that also takes an hour at the same temp. it works great. Also can use crush chips on top for crunch but I usually go without. I put half the cheese just on the top.

Slow Cooker Beef Stroganoff I

Reviewed: Jun. 7, 2006
Have been making this recipe for months. I like to use cream of wild mushroom soup instead. It is also made in a beef broth and the one time I used golden mushroom I didn't like it so well. I also add some garlic powder, fresh cracked pepper, a beef boullion cube dissolved in the waterusually about 1tbsp of onion soup mix and a big spoon of sour cream at the end with the cream cheese. We always serve it over egg noodles. I have shared this recipe with many and everyone like it save one who thought it to rich. In that case I say take out the cream cheese.
