I am a professional, young woman that enjoys cooking wonderful tasting, HEALTHY food. Healthy absolutely should equal delicious ! I was in the restaurant industry at a corporate level for 10 years for a multi-award winning restaurant group in Washington, DC. I learned alot during this time - from how to deal with a re-cook, what a medium prime rib should look like, how to present food with flair, using spices rather than fat for flavor, etc.

eek. I try & make them few and far between. The worst thing I've made was a pizza on store bought low-carb pizza dough. It was horrible.

Vegan Fajitas
YUM! I added 1 portobello mushroom to add some "meatiness". I also added half a packet of "fajita" seasoning dissolved in water. I also skipped the corn & beans opting for a cold corn & bean salsa on the side. Next time, I will reduce the amount of olive oil as even drained, the serving dish had a ton of oil in it - which made the final few servings way too oily. Definitely great & will make again!

Artichoke Chicken
Good and easy. I easily covered 5 medium to large chicken breasts with the mayo/artichoke mixture. I cooked mine for 45 minutes at 375. They were most and flavorful. I did crack some sea salt on my chicken before putting mixture on top. I also added buttered panko bread crumbs that also had basil flakes mixed in, on top....This added a nice golden color to the top and additional flavor. I will make this again.

Mushroom Pork Chops
I found this recipe very bland....Added extra garlic and fresh thyme and still felt like something was needed one more "layer" of flavor....The chops, however, were very moist.
