Best Marinara Sauce Yet

Very nice sauce! I found 1/2 cup of wine to be too strong the first time I made it, so the second time I used 1/3 cup and it was much nicer. I add probably 1/3 cup brown sugar to this as well, as we prefer a sweet sauce.

Janet's Rich Banana Bread

Totally incredible!! Moist, not too dense, and absolutely delish! Instead of using the full 1/2 cup of butter, I substituted 1/4 cup of applesauce for 1/4 cup, but left the other 1/4 of melted butter in. I also used egg beaters and fat free sour cream, to lighten it.

Caramel Macchiato Cheesecake

I made this with two pre-made 9" crusts and it was the perfect amount of batter. My cheesecake did crack, which was expected because I didn't bake it as directed in a springform pan and water bath. Maybe it's me, but it tasted like a "regular" cheesecake to me that required more work than other recipes I use. Don't get me wrong, it was good, just not as spectacular as expected. Maybe I need to use stronger coffee or espresso next time. My boyfriend loved it though, and it was his birthday dessert, so that's what matters!

Rich and Simple French Onion Soup

This was great! Definitely did NOT need 1/2 cup butter or the olive oil. I used 6 T butter and it was still too much, probably would be okay with just 1/4 cup. I toasted my bread before broiling as others suggested, which helped a little with the sogginess.

Cajun Shrimp

Great way to make shrimp for Lent! The spices are yummy with the right amount of heat. I used pre-cooked, frozen shrimp and even they took in the spices well. I removed the shrimp after cooking them, added some half & half to the remaining spices, and heated to make a sauce to put with the shrimp over brown rice.

White Cheese Chicken Lasagna

This was great, looking forward to making it again. It made the perfect amount of sauce, which was very tasty and had a nice flavor. I used FF ricotta and reduced fat cheeses & butter. I used canned spinach because it was all I could find, and I will definitely not do that again. I'm not a huge spinach fan to begin with, but anything would be better than canned!

Chocolate Cakes with Liquid Centers

I made these for Valentine's Day dessert and they were sinfully yummy! I baked them for about 10-11 minutes in ceramic ramekins. I had a little trouble getting them out of the ramekins, despite a thorough buttering and flouring from Boyfriend. Still tasted fantastic! Served with french vanilla ice cream.

Pesto Cheesy Chicken Rolls

I halved this recipe and had 4 half chicken breast servings. They were difficult to roll, so I more folded them in half. I rolled them in bread crumbs as other users suggested. Served with linguine with red peppers and more pesto. A tasty and easy Valentine's dinner!

Chocolate Covered Strawberries

I made these ahead a few days in preparation for Valentine's Day and stored them in an airtight container in the fridge. When I took them out for Valentine's dessert, I found that the chocolate had "sweat" on it and that there was some standing "sweat" around each covered strawberry. Still tasted great, although the chocolate had started to come away from the fruit a bit. Weird?

Great tasty little treat! It made 47 buckeyes and I had chocolate left over. I had some trouble with the dough, however. It was VERY crumbly and hard to form into balls. Not sure what the problem was, as I followed the recipe exactly. Maybe I needed more powdered sugar.

Cake Balls

I made carrot cake with cream cheese frosting dipped in white chocolate, and lemon cake with buttercream frosting dipped in milk chocolate. They came out wonderfully. My only complaint was that, even after chilling the batter twice (before starting and halfway through to rechill), I still ended up with crumbs in my melted chocolate which made it very difficult to coat my last few balls. This might be solved by freezing the balls before dipping, but that was too time intensive.

Apple Crisp Cups

Great flavor and presentation. These were perfect for a Halloween gathering with friends. I had some difficulty getting them out of the muffin pan, despite spraying it well with Pam and letting them cool/set for 5-7 minutes in the pan. Some of them broke halfway down. Stomach didn't mind though!

Baked Zucchini Chips

Very tasty! I baked them for a little longer than the recipe said to in order to get them crispier. Left out the parmesan cheese because I'm forgetful, but we didn't miss it. We dipped them in spaghetti sauce, yum!

Cookies 'n' Creme Fudge

Great, tastes just like a Hershey's Cookies & Creme bar (my favorite as a kid). A little softer than I was expecting, but very nice. I made a batch for my boyfriend's mother for Mother's Day, I'm sure it will be very well received! Edit: made again today for coworkers. Mistakenly bought Double Stuff Oreos--oops! I had a very hard time breaking them without the icing oozing everywhere. I would avoid them in the future!
