Monkey Bread I

I used butter the first time I made this, and it did not turn out so great. The second time I actually followed the recipe and it was perfection! This recipe makes a gooey soft bread with a perfect sweetness. It was a big hit with my kids.

Empanadas

These turned out great! on an accidental miscalculation I ended up quadrupling the recipe. The dough is not unmanageable, just use lots of flour on your tools and rolling surface. I did not have a cookie cutter so I used a glass, sealed them with a little water and pinched them shut with a fork. I made most of them with a simple apple pie filling. I just chopped up the apples much smaller than I would for pie. The rest I filled with fruit preserves. I found the apple pie did not leak at all while the fruit preserve filling was very leaky when cooked. Since I had so many leftovers I just froze the prepared but unbaked remainders. I cook them from frozen just adding a few additional minutes. They turn out just as good as the fresh ones!

Fresh Apricot Pie

This was really great! I was not sure what to expect because I have never made anything with apricots before. It made a nice tart pie, and it got great reviews from the family!

Strawberry Cake II

I have made this several times and everyone loves it! Make sure you are using unsweetened frozen strawberries. I have a feeling the way too sweet reviewers are using sweetened ones. I do not use the frosting with this recipe either. I use a cream cheese frosting from the BC cookbook.

Chicken Breasts with Balsamic Vinegar and Garlic

I really wanted to like this, but I was not hugely fond of the flavor. I'm willing to try it again to see if maybe it was just a fluke. On the plus side it was easy to make, and I like that it is a healthy dish for my family.

Lisa's Chocolate Chocolate Chip Cake

I made many of the changes that are suggested to lighten the calorie and fat load, because over 500 calories per slice is insane! I used light sour cream, used 1/4 cup of oil and 1/4 cup applesauce and a fat free sugar free pudding. These changes make the cake slightly more dry, but if you bake it a day ahead and keep it covered it will be just as moist and delicious as the original recipe!

Seven Layer Tortilla Pie

I was surprised at how wonderful this dish turned out to be! I made it exactly following the recipe. It turned out so great! My 3 year old son called it a pizza and my husband is requesting a repeat. I served this with some diced (fresh) tomato and avacado.

Butternut Squash Casserole

This is a really great recipe, but cut the sugar! I used 1/2 cup white and 1/2 cup brown (for the topping) and it was still very sweet. I don't think a full cup of both is necessary. A very good dish, and I plan on making it again for thanksgiving. Thanks!

I love this recipe! I put it on french toast in place of syrup, and on the icecream as recommended. Super easy to make, and quick too. Be warned, it is incredibly sweet!

Herbed Chicken Nuggets

My whole family loves this recipe. My two year old cleans his plate every time I make these. I have discovered that straining the chicken out of the egg mixture with a slotted spoon helps the breading to stick to the chicken better.
