Tuna Noodle Casserole from Scratch

Love it! Actually, the breadcrumb/butter mixture is the best part. I will double that next time. Also, I used a little more cheddar - white and extra sharp! - and mixed half of it in with the cream sauce.

Healthy Garden Salad

I substituted hemp seed oil for the grapeseed oil, but otherwise followed the recipe exactly. It was fabulous. I made this recipe on Thursday morning, took it on a camping trip, and we didn't eat it until Sunday night - and it held up perfectly. This is really an exceptional recipe.

Portobello Penne Pasta Casserole

This really is a five star recipe. I used half the butter, half the soy, 1 1/2c milk and two garlic cloves - and it turned out just right. It surely won't serve 8 as indicated... maybe 4.

Vegetarian Kofta Kabobs

I really liked this! I soaked/cooked my adzukis - they take less time than other beans. I used extra garlic and hot sauce and they came out perfect. I squashed mine like small cookies - no skewers, and froze the leftovers. (I tried a few as larger patties and they didn't survive the flipping.) A yogurt dip is essential. This made for a very inexpensive and yummy meal!

Tomato Barley Soup

Just right! I added a little extra barley and a little more broth (veg broth). I also used the can of diced tomatoes that contained green chiles. Yum!

Thai Chicken with Basil Stir Fry

Wilted Spinach with Cherries and Goat Cheese

I've made this recipe many times now and love it just as it is. Its also great with dried cranberries instead of cherries, and with a touch of rice vinegar at the end. And if you need something *really* quick, it works without the mushrooms and onions. Its become a staple around here.
