Peppermint Chiffon Cake

i enjoyed the taste of the cake immensely. it was very fluffy, but i have to agree that it was a bit dry. I used the "vanilla glaze" from this site, adding in a tsp or so of peppermint extract to the glaze, and then topping off with crushed candy canes.

Double Layer Pumpkin Cheesecake

It was very yummy and didn't last 2 days at our house. I used Ivins Famous Spiced Wafers (classic philly ginger snaps) for the crust and it definitely increased the yum factor. I tend to like my cheesecake a little bit sweeter so i added a smidge more sugar, but if you like cheesecake the way its "supposed to be" (according to my mother) then as written is great.

Pan Roasted Pork Tenderloin with a Blue Cheese and Olive Stuffing

Couldn't find olive tapenade in my town, so had to suffice with an olive pesto, but still received many compliments. i can attest that the smell was wonderful, but being a pescatarian and allergic to wine, i didn't try it myself, just cooked it for a dinner party.

Fantastic. I'm not a soup person in general, but i consistently crave this recipe. I served it for a dinner party and it easily was increased to serve 20. and was met with fave reviews

Wild Asparagus Quiche

this recipe tastes amazing! It is a bit sweeter than some other quiches I've tried, but still good and a great way to use up any extra veggies. (i've swapped red peppers, broccoli, pretty much anything i had on hand) However, I'm not sure if its something i'm doing wrong, but I consistently getting too much filling and the filling is very soupy. I usually bake at least 20 minutes longer than the recipe says, and its still a bit too soft.

Angel Food Cake III

this is probably an obvious statement, but don't use the "egg whites in a carton" option for this! i balked at not using so many egg yolks, but ended up heading to the store in the midst of baking because the carton whites just would not whip up. but the second try was great and enjoyed by all. served it for a dinner party with fresh strawberries.

Peppermint Meringue Cookies

these were the highlight of my christmas season this year. i ended up making several batches. they were described as "all the taste of a candy cane without all the work" by one of my friends. one change that i made is that instead of using candy canes, i used the wrapped peppermint candies, about 15-20. worked just fine and tasted great.

Baklava

to quote one of the eaters of this baklava...it was divine! i used a combination of pistachios and walnuts for the nuts, and followed the rest of the recipe directly. I did notice that my baklava browned well before the hour was up (i took it out around 45 minutes), and i had an excess of phyllo when i was done. definitely time consuming, but still fun to make and easy too. i will definitely make this again.

Best Ever Caramel Apple Crisp

this crisp was amazing! i've gotten compliments on it from everyone who's eaten it. i would say that i used the suggestion to use a larger pan..but i probably could have fit it in a smaller pan (guess i used smaller apples). Also, i accidently added a cup of sugar to the "crisp", and it came out with more of a crust, but was still yummy.

Caramel Macchiato Cheesecake

i've served this for company twice this week, and everyone is raving about it and wanting the recipe. it is amazing! though it is definitely tasting better the longer it sits in the fridge (but thats normal for cheesecakes)

this dish was amazingly delicious. i didn't have any lemon, so i used a bit more white wine, but i could tell that the lemon would have added another dimension. will definitely try it again (and will use the lemon next time!)

Tofu and Cheese Stuffed Shells

made this last night, and it was delicious! i will definitely make it again. i did use a store bought sauce (like a lot of other folks), but i used the zucchini and carrots and it was great. (i also used soft tofu, which wasn't specified in the recipe, but seemed like the right choice for this meal.)
