Pineapple Upside-Down Cake VII

This was an awesome cake! I used a yellow cake mix. For the 1 cup water called for I used 1/2 cup juice from the pineapple and 1/2 cup coconut rum. I baked it in my 12" Pampered Chef skillet. I used one can of pineapple ring and then filled in all the empty area with crushed pineapple so there was pineapple in every bite! It was totally AMAZING! Moist, the topping had a little crunch to it. Everyone loved it! Will make again and again! Next time I'm going to try using fresh pineapple and will soak it for a bit in the coconut rum and then use the juice and rum for the water.

Best Spinach Dip Ever

This very good, however, I hate using dry soup mixes in my dips, never care for the taste, so I left that out and added 1/2 tsp each onion powder and seasoning salt and 1 clove crushed garlic. Very good!

Emily's Dressing for Taco Salad

This was really good. I left out the chili powder because I didn't feel that it needed it with the picante sauce. Everyone loved it! Served with taco salads in a bowl, with a choice of taco meat or fiesta chicken. Was equally good on both!

Springtime Spaghetti

This was very good! My family really enjoyed it and my 7 year old son requested the leftovers in his lunch for school today! I did add sauted onions and salt and pepper and I used skim milk instead of the heavy cream because I didn't have the cream. I'm sure it would be even better with the cream, but it was good with the skim milk and that makes less calories. I didn't time my meal well so this sat in the pot for about a half hour before we actually ate it and it was still great, can't wait to make it again and eat it right away! LOL! Great recipe, will be in our summer rotation for sure!

Cranberry Carrot Cake

This was just ok... I made exact except I omitted the nuts and cranberries because the birthday boy didn't want them in, I felt it was very spongy like, not overly impressed, probably will keep looking for the perfect carrot cake recipe.

Ranch Oyster Crackers

These are great! Quick and easy with ingredients that you have on hand. Also good if you use pretzels instead of the oyster crackers.

Summer Beer II

I thought this was very good, but seemed a little too strong so I first added an extra 12 oz of water, still a little too sour or something so then I added a can of sprite and it was perfect! We all loved it!!! We prefer the title "Skip and Go Naked" though, much more fun, although the way I modified it makes it not quite so wicked, so no one was naked, but I already have requests to bring it for 4th of July and camping! Thanks for sharing!!!

Darra's Famous Tuna Waldorf Salad Sandwich Filling

I found this recipe on here a few years ago and have been making it ever since. I use canned chicken instead of the tuna, but everything else stays the same. I have a camping trip with friends coming up and they called to make sure that I'm bringing my famous chicken salad as usual! Thanks for such a great recipe!!!

Carrot Cake III

I made this following the recipe exactly, except that I used 2 9" round cake pans (I adjusted the time accordingly). I have to say that I was very disappointed with the look of the cake when I took it out of the oven. Both of the cakes had collapsed in the middle. So, of course, when I frosted it it was concave in the middle. Which, of course, made everyone at the b-day party pick on me, until they tasted it! It was great! The taste was awesome, just wish I could figure out what happened with the presentation! Anyway, taste would be 5 stars but for presentation I had to go 4... Great recipe. Thank you!

Peach Salsa II

I just made this salsa, and have only tasted what was left in the pan after canning the other, but what I had is awesome! We just dipped a cracker in it to taste it, but I can imagine the possibilities are endless. I left all of the seeds in my jalapenos, so it has quite a kick, but we like things spicey. It reminds me a lot of the jalapeno jelly that I make, the taste, but more of a sauce than a jelly. I will definitely be making this again. I would like to try one that is more of an actual salsa (without the pectin), but love this!

Amazing Butternut Squash

Um, sorry, but we really did not like this at all. This was our first time cooking and eatin squash, and none of us liked it much. I followed the recipe to the letter, and thought it was a lot of work (peeling and chopping the squash) for the taste. Sorry, just our opinion:)

Jalapeno Jelly

I made this to give for Christmas presents (and to use up jalapeno peppers from my garden), when I took a jar to my sisters house to test it out, the whole jar was eaten and I have people begging to be put on my Christmas List! It was fabulous! I left the seeds in all of the jalapenos (except the last four that goes in at the end), and it was hot, but that's what everyone loved about it! Great recipe! Thanks! Already planning on making a few more batches for gifts and for us!
