Vegetarian Chickpea Sandwich Filling

I absolutely LOVED this (and I am not a vegetarian)!! I made it exactly as written except made more and didnt really measure my ingredients, but I def. added more mayo than recipe calls for! I didnt mash my garbanzo beans either, just kinda smashed them a bit but they stayed pretty whole! I stuffed them in a whole wheat pita with some lettuce and enjoyed it so much that I am making more now! :)

I looooooved these and they were so easy to make even though I was kind of afraid to try at first. And as other reviewers said... dont leave out the nutmeg!! :)

Roasted Curried Chicken with Couscous

WOW... this was awesome! I used chicken leg quarters but followed the recipe otherwise. I rubbed the spices under the skin and on top, and broiled a few min. at the end to make the skin crispy. For those who dont want couscous I substituted regular white rice and that came out awesome too!! I def. recommend this and cannot wait to make it again! :)

Moroccan Tagine

I actually took everything and threw it all in the crock pot and cooked it on high for 4 hours! I added some cumin, turmeric, garlic salt, cinnamon, etc. and after tasting it, it was just slightly bland so I added some curry powder and a little garlic salt and it came out really good. I'll def. be making this again and the crock pot made it super simple.

Grilled Sausage with Potatoes and Green Beans

We LOVED this! Made the recipe as is, except added cajun/creole seasoning and baked it in the oven! And I added big chunks (so they didnt get mushy) of fresh zucchini and yellow squash I needed to use up! I will def. make this again, thanks!

Slow Cooker Cassoulet

After reading the reviews I was skeptical about this but went ahead and made it anyways. I made it pretty much exactly as written except used chicken broth instead of wine, therefore I did NOT add any salt. This came out pretty good, tasted kind of like bean soup with sausage and chicken in it. :)

Potato Curry

I had higher expectations for this dish! It turned out to be very bland, even after doubling the seasonings. And it had a funky aftertaste, too! I don't think I'll try this one again, but it was worth a shot.

Honey Curried Roasted Chicken and Vegetables

Wow... this was SOOOO AWESOME!! I did as a previous reviewer did and put the veggies in uncooked about 1/2 way thru. I did not use mushrooms but i did use apples, which I highly recommend!! I also covered my chicken for the first half with foil. This recipe is so great, I think everyone should definitely try it!!! :)

Slow Cooker Buffalo Chicken Sandwiches

These were GOOOOD!! I used a combo of 1/2 franks hot sauce and 1/2 Lawry's Buffalo bbq, and regular bottled ranch dressing! I also put the chicken in thawed out so they only took like 3 hours on high! End result was great!! :)

Andrea's Pasta Fagioli

Just made this right now and it is sooooo good! I used 4 cups chkn broth and 1.5 cups water, plus added one can diced tomatoes w/ jalapenos. And the tomato sauce I used was also a spicy sauce, so it gave it some perfect heat! And I only used 3/4 the amt. of pasta (macaroni is what i had). YUMMMM!!! I highly recommend this soup!

Cuban Ropa Vieja

This was very good (soooo tender and juicy) but...I agree it did need some more seasoning. I added 4 oz. can diced green chiles, garlic powder, and some Adobo seasoning, and it still needed somethin' I can't put my finger on. I do recommend trying this, its worth it!!

Quick Gnocchi

I just made this (never made gnocchi before) and I was impressed!!! It was so simple, and soooo delicious! I added some garlic powder and Italian Seasonings, and used only 1 cup of flour as someone else suggested. Also, topped it with some fresh parm/reggiano! Perfection in a bowl!!! (Scored some points w/ the BF, too) :P I served it with a sausage tomato sauce (Classico), and steamed broccoli. Success...I HIGHLY recommend trying this recipe!!

Butter Bean Burgers

These are so good, and can be soooo much healthier and diet friendly too! I used egg substitute, less cheese (part skim mozz.) italian bread crumbs instead of crackers, and used the George Foreman to cook them with just a spray of olive oil cooking spray! Just don't try to flip them or they might come apart.

French Onion Soup II

I have to give this recipe 5 stars, esp. cuz I wowed my BF who said to me "I didn't think you'd be able to make French Onion Soup this good" blah blah ;-) But anyway, all I changed was adding alot more Worcestershire sauce (no oil, only a little cooking spray), and some white wine & minced garlic while sauteing the onions. And I used Provolone cheese cuz thats what I had. I impressed myself, and my BF, for my first French Onion Soup!! :-D I highly recommend this recipe, it was great!

Cream of Sweet Potato Soup

This soup is AWESOME and was so creamy! I just boiled the sweet potatoes in the chicken broth (I used much less than recipe called for... bout 36oz), with some chopped onion and then used an emulsifier while adding the other ingredients. Plus, used smart balance 1% milk instead of cream and it worked great and is much healthier! I'm definitely making this again and I highly recommend it to anyone who likes sweet potatoes! :-D

Cajun Chicken

This was great, juicy chicken! For a lower fat version (and for those who say there is too much oil), spray chicken w/ olive oil COOKING SPRAY instead and then add heavy seasonings & marinate... it worked perfect for me and I didn't have to use all that oil! I added some garlic salt and creole seasoning too! I recommend this recipe to everyone for an easy, simple grilled chicken recipe!

Soul Smothered Chicken

I used boneless/skinless chicken breasts, and a little less butter and this came out DELICIOUS! :] It was a big hit and I'll definitely make it again! I served it w/ garlic mashed potatoes and used the sauce as gravy... Perfect!!
