Quick Savory Cranberry Glazed Pork Loin Roast

I made this just as written and this is one of the best pork loin roasts I've made. The sauce is on the sweet side and I wouldn't to use it on side but you don't notice the sweetness when its on the meat. My 4 lb roast did take 1hr 15min to cook to 145 at 425. I also didn't baste every 10min as the roast was completely covered with the sauce every time I went to go put some on. I wanted to try this out before I make it for Christmas dinner. I think I may try sugar free apple jelly and add a little more horseradish and mustard but only because I'm trying to watch my sugar intake.

Balsamic Roasted Pork Loin

i used apple cider vinegar instead of balsamic. the roast was not that tender and the carrot that i tossed into the pan, tasted like vinegar. i dont think using balsamic would have made it taste less vinegary. i use the pan drippings to make gray, which in this case made it taste like vinegar as well. would not make again

Rubbed and Grilled Pork Loin

Delicious. The only thing I omitted was the coriander and only because i didn't have any. I followed the gas grill method mentioned. It did cook quicker than noted - 60 min. This was so juicy. The juices from resting were used to make the gravy. Will definitely be making this again.

Oxtails with Gravy

I followed the recipe and while it tasted quite good and the gravy was very good, I will not be making this again (and it was a unanimous decision). This was way to greasy. As I'm typing this, it feels like my arteries are clogging. I am ok with some greasy meals. But even boiling for 3 hours, there is still too much fat. And the broth you use for the gravy has the fat you just boiled off (and I skimmed off 1/2 cup of grease before making the gravy. How this meat is so expensive, is beyond me. If I was starving and had nothing else to eat, would be the only way I'd make this again. This is similar to pot roast, which is what I'll make next time. So if you know what oxtail tastes like and are ok with the grease, you'll like this. If you've been thinking of buying oxtail and trying it for the first time, just get a pot roast.

My Best Clam Chowder

This was very good. I did make a few changes based on other suggestions, such as sauting the veggies in bacon fat. I only had a 50oz can of clams, so i used the juice from that and did not add any additional water. I also added a couple of chicken boullion cubes as I was afriad that it would lack flavor and some garlic poweder. I used the 3/4cup of flour and it was perfect.

Chicken Fried Chicken

Good, nice crust. I did add more seasonings as we like food that has some spice. i did flour it before putting in the egg and cracker mix. I had made 4 breasts and barely had enough cracker mix to cover it (and i used the full sleeve of saltines), you may need more. You will definetely need more oil. there is no way that 1/4c of oil will fry up that much chicken. thats what i put in the pan when i first started the first batch.

Fresh Broccoli Salad

It was ok, but I guess you really have to like your bread to taste like herbs to really like this. Guess our family likes more plain types of bread. I had to freeze what was left over and even for the next dinner, it didnt get eaten up. Ended up drying what was left and using it for breadcrumbs.

Minestrone Soup II

Very good recipe. I ended up adding a 1 lb package of frozen vegetables and no zucchini. I had cooked about 1/3lb of ring pasta in the soup pot. The soup got rave reviews from the whole family. Will definately make this again. I also made the soup in an 8qt stock pot, and it was just the right size.

Apple Crisp IV

This was an awesome recipe. The whole family just loved it. The crisp on the bottom is what made it extra special. I used a little less butter to try and make it a little healthier. I just made a second one and this time I tossed the apples with some cinnamon, nutmeg and 2 tbsp white sugar. In reading some reviews I see that some recommended to use less flour, so I tried this batch with 2/3 c less flour and increased the oats by 1/3 c. Absolutely delicious!
