I used about 1/3 mustard greens and the rest spinach - still too bitter for me.

These were much more interesting and tasty than the refried beans I get from a can, mix, or even restaurants. Like others, I used pintos (1 can, drained), 1/2 cup of broth in place of water (following the advice of another recipe, used hot broth to make less starchy), only a dash of salt and pepper, and only a few drops liquid smoke. Also some canned chilis. Sauteed the onion and garlic in olive oil (I know, this adds some additional fat), then mashed all the beans in the pot with a potato masher. Could have done with less onion. These would be good in burritos, I think.

I liked these. I agree with another reviewer, these are more thick than fluffy. I like thick pancakes, but I'm not sure it's worth it for me to get out the mixer. I would make them again, but w/o beating the egg whites (I wonder how I should change the recipe/ratios?). They are a little bland, but with syrup it hardly matters. My 16-mo-old doesn't seem to care. I did add some cinnamon, I think it was a good touch. And in answer to somebody's question, I think the oil in the recipe is just for frying.
