Mom's Island Treasures

Reall, really good. I had to lower the temp. to 350 because the bottoms were getting too dark and the tops still raw. I added a little coconut extract and was very pleased with the results.

Artichoke & Spinach Dip Restaurant Style

This recipe made me a star at my in-laws' party. Everyone raved and wanted the recipe. I used pre-chopped garlic and baked it for a few minutes. I would like to use the roasted garlic, but I just didn't have the time - maybe next time I make this... there will be many next times!

No Bake Chocolate Oat Bars

These are soooo good. Very rich - you need a glass of milk to drink with them. I love these. The only change I made was to melt the chocolate chips and peanut butter in the microwave for 1 minute and then stirred until smooth.

Swiss Chicken Casserole II

Pretty good. I used cream of mushroom with roasted garlic (didn't have any cream of chicken). I also seasoned the chicken with cajun seaoning before putting on the cheese. We enjoyed this.

Best Chocolate Chip Cookies

Fantastic! I chopped up leftover chocolate bunnys from my kids' Easter baskets and about 1/2 c. semi-sweet chips to make enough chocolate. I also used pecans (just what I had). I did not change the brown/white sugar ratio as suggested by many reviewers and we loved them. My husband raved - and that is really saying something. They had a very similar taste to Toll House cookies, but came out prettier (didn't spread like Toll House). I am very pleased with these, and will make many times in the future.

Blueberry Coffee Cake I

I wanted fewer servings so I cut the recipe in half and baked it in a 9 X 9 in pan. I should have used a smaller pan - there wasn't enough batter to cover all the blueberries. Even so, it was wonderful for Easter brunch. I used about 1 cup of frozen blueberries, thawed slightly and rinsed. I did not change the milk or the flour ratio as suggested by other reviewers and the batter did come out quite thick (almost like a cookie dough). However, I did not find the cake to be dry. I will make this again and again. Next time I will try a smaller pan - maybe a loaf pan.

Cream Cheese Pound Cake I

I cut this recipe in half and baked it in a loaf pan. It was a fantastic pound cake. I made this for my mother for her birthday, served with strawberries and whipped cream. Everyone really liked it. It was a little crumbly on top, but nothing to make you not want to eat it. Tasted even better the next day.

Peanut Butter Fingers

I can't stop eating these! Based on other reviews, I used a smaller baking dish (I'm not sure of the dimensions; it is an oval casserole dish). Otherwise, no changes needed. I love these!

Honey Mustard Grilled Chicken

This rating is just on the honey mustard. It is wonderful! I have been looking for a restaurant quality honey mustard and after finding this one, I can quit looking. I usually tinker with recipes to suit our tastes, but there was no tinkering needed. This honey mustard was great on chicken and on our salads. I love it!

Focaccia Bread

Fantastic! It did take a bit longer to rise, but it was worth the wait. We liked it with the cheese on top. I think next time I will put in a bit more garlic. Otherwise, no changes needed. This is a great recipe when you need a very quick dinner bread.

Mom's Ginger Snaps

If you double the spices, roll in powdered sugar, and bake for 8 minutes you have the PERFECT ginger cookies. I have baked a few different recipes for ginger cookies and these are the ones that get the rave reviews. My daughter keeps asking to make more. This is now her favorite cookie (it used to be M & M cookies). These are so easy and quick to make (no butter to let get soft, only one kind of sugar, only one egg). They are nice and soft after baking for 8 minutes (just let them set on the cookie sheet for a few minutes to set up). I love these cookies! I will make these again and again!

Raspberry and Almond Shortbread Thumbprints

I was totally unimpressed by these cookies. Mine came out ugly - not like the picture. Also, there was no flavor to the cookie part and I even added a dash of vanilla. I had to cook them longer than the suggested time. These were a huge waste of time, ingredients, and energy. I will not make these again.

Key West Chicken

This was OK - nothing special. I used drumsticks because that is what I had. We could only taste the lime if you got some with lime zest (which I added). Maybe it needed to marinate longer (I marinated for the recommended time).

Chicken Eileen

This is a great meal to make when the pantry is low. As written, it is a bit bland and needs some seasoning. I used thin sliced breasts which was faster than pounding chicken. However, they were not big enough to roll well, they ended up more folded over - which was OK for just the family, but came out too ugly for company. I will make this again.
