Baby Back Ribs

I followed the recipe once and it was indeed good. The second time I changed up a bit and it was cooked to perfection. Here's what I did: I marinated overnight with Cathy M's amazing dry rub (double sized for 4 pounds ribs) and added real garlic (4 cloves sliced lenghthwise), 1 tbsp dried parsley and 1 tsp dried oregano. Marinated the ribs on the rub overnight. The next day I cooked the marinated ribs (no BBQ sauce) for 2 hours covered with a foil. Removed ribs from oven, brushed them generously with BBQ sauce and took back them to the oven for another 30 minutes cooking them covered once again. Took out from the oven and let it rest for 30 minutes. Just before serving I took the ribs back to the oven and broiled on high (bottom shelf) for approx 10 minutes. I did no use the foil pouches, but preferred to cook them on a large rectangle pirex sprayed with vegetable oil and dealt with the mess later. It was not very hard to clean up.

Chicken, Garlic, and Sundried Tomato Pasta

I really liked, but won't give 5 stars because I had to make adjustments so that it was not too blend: per reviews I added white wine. I also added mushrooms, fresh parsley, red pepper flakes and bacon pieces. The end result was great! I would do it again and again.

Fast and Friendly Meatballs

This is a wonderful recipe. I added garlic powder and parmesan cheese. I took longer than only 20 min in the oven, but I may be because the meat balls were big. I ate with spaguetti and tomato sauce. Wonderful. Thanks!!!!

Greek Garbanzo Bean Salad

This recipe is great as is and the best is that allows for multiple combinations. I grabbed what I had around the house so replaced cucumbers for green peppers, Italian dressing for red wine vinegar + olive oil and also added dried italian seasoning. It turned out great. Very refreshing and crunchy. On the down side, this is not a salad that you can do ahead of time because the vegetables become soggy, so do it 3 hours ahead at the max.

Lighter Banana Muffins

I really liked this recipe. Very quick, easy and delicious. Based on the reviews, I made the following changes: 1)Replaced white sugar for brown sugar; 2) added 4 oz of apple sauce; 3)added tsp vanilla extract; 4) added 2 tsp cinnamon; 5) added 1 banana; 6) added brown sugar as a topping. Will definetely make it again... many times!!!

Spicy Bean Salsa

This salsa is great and easy to make. I had it while at a friend's house and decided to try the recipe myself. I did give my personal touch by adding to recipe: 1 tbsp of Frank's sauce, chopped cilantro,2 tbsp picante ready salsa.
