Golden Rum Cake

I love this. Putting the cake back in the pan with the rum sauce really is brilliant. That said some of my family find the sauce overpowering...just a caution if you will serving this to anyone who might not appreciate the flavor. I have made this twice...the 2nd time I used butterscotch pudding and mixed in a cup of butterscotch chips. It was good but honestly the cake is already great as is. So while it was fun to experiment. I will probably stick with the recipe as written from now on.

Slow Cooker Blackberry Pork Tenderloin

Made this for Christmas dinner for DH and the kids. Everyone loved it. I think I pretty much followed the recipe exactly, wine reduction and all. I did sear the tenderloin in a pan before putting it in the cooker. I served the sauce and berries on the meat and used the juice from the slow cooker as a gravy. No one seemed to mind. :D DH commented that it was the best pork I have ever made.

Fried Cabbage II

Very good and easy. What more could anyone want? I will probably drain off some of the bacon drippings next time, but that's just a personal preference. No one in my family likes cabbage but they sure liked this!

Red River Beef Stroganoff

Very nice. Family loved, particularly the 10 year old boy. While I was cooking I thought perhaps the next time I'd cut down on the onions, but the full amount turned out great. Used fresh mushrooms and added garlic (both sauted with the onions). I took the advice of some others and added some red wine with the broth. Yum.

Grilled Chicken Kabobs

This was great! I cut the oil in half and left out the red pepper since my children were going to be eating it. I threaded the chicken on skewers with mushrooms and sliced red onion. Everyone cleaned their plate and wanted more.

Blueberry Cream Cheese Pound Cake I

Baked this for a church dinner. Turned out very nice. However, it was not done at 45 minutes. I baked it for another 10 at 355 - this did the trick. I used vanilla cake mix, egg beaters, and light cream cheese. Next time I might also substitute applesauce for the oil.

Easy Batter Fruit Cobbler

Simple enough to make while preparing dinner. I didn't have any problems with the dough as some reported. I did use a little over 3 cups of berries though. Also used lighter options for the milk, butter, & sugar. Turned out great - quickly gobbled up.

Mouth-Watering Stuffed Mushrooms

Halved the cream cheese and added pecans & bread crumbs. Also added a bit of sherry while sauteing the garlic and mushroom stems. Left out the pepper. Very good!

New Orleans Chocolate Bourbon Pecan Pie

Used dark chocolate chips (spread over crust before adding batter), 4 tbs bourbon, & baked 1 hour at 350. Perfect!!! I should have made 2.
