Arangini (Italian Rice Balls)

Just to let you know....you can stop after the balls are formed and rolled in bread crumbs. Simply cover them in one layer and put in fridge. Bring to room temp before frying them. Maybe they even held together better because of the refrigeration. 24 balls means they are pretty big...I like them when they are about 2 bite size for an appetizer. I make about 35-40. Saw these for sale on the street in Sicily and they were as big as naval oranges. Great recipe, thanks!

M's Sloppy Joe Sauce

Been wanting to try ground turkey since it is more nutritional than beef, and this recipe sounded great. Had trouble browning the gr. turkey until I remembered I had purchased gr. turkey breast. The still white gr. breast didn't look too appetizing so I added Kitchen Bouquet's Gray Mate to brown it up a bit. Did the trick and tasted great! Not afraid to substitute gr. turkey for beef anytime.

Black Bottom Cupcakes I

The recipe made 18 cupcakes with a few slight changes. I added 1/2 tsp. vanilla to cream cheese mixture and a small spoonful of raspberry jam to top the cupcakes before putting in the oven. Stir with a toothpick to distribute the jam. When they cooled there was an indentation on the top, so I filled it with a ganache made with 1/4 c. chocolate chips, 1/6 c. scaled heavy cream, and 1/8 tsp. vanilla. Taking them to school tomorrow....see what the other teachers say.

Red Kidney Beans (Rajma)

Loved it! Served with Chicken with Indian Spices (Low-carb. Cardamom was not listed in ingredients. Good without. Didn't have red kidney beans so used cannellini beans successfully. Yum. can't wait to make again.
