The Old Boy's Strawberry Pie

This pie is really, really good. We read the comments and took a hint from CookingCutie on the topping and used her oatmeal mixture. I used a storebought pie crust and berries we picked ourselves. We did not mound the berries as previous reviewers suggested we did not do. Here is my secret for a delicious fruit pie, shared only here. Before mixing the ingredients together to stir into the fruit, I allow the berries to sit in some of the sugar for a while. Then reduce the sugar in your flour-cornstarch-sugar blend. Each portion of the pie was good, and if you like yours slightly tart, reduce the sugar overall even a little more. We added some whipped cream and everyone loved it!

Easy Vegetarian Corn Chowder

This was good. I omitted celery & carrots because I did not have any and used vegetable bouillon in place of stock. I also used whole milk instead of half-and-half, and 2% instead of skim, and added green chiles to spice it up. And omitted paprika based on other reviews. Came out great and was a hearty meal with some bread on the side, and even my non-vegetarian husband liked it (though he added some cooked ground turkey.) A keeper!

Parmesan Crusted Chicken

This was the easiest, most delicious chicken recipe ever. I hope my husband does not get sick of this, because I plan on making it all the time now. I coated each piece of chicken very well with the mayonnaise mixture before sprinkling each side with bread crumbs.

Banana Bran Muffins

The only changes I made were using all wheat flour and applesauce instead of oil. I thought these tasted too "healthy," despite using a full cup of sugar. I will look for another recipe next time.

Strawberry Muffins

Delicious! Be sure to add brown sugar, vanilla, and cinnamon to these. Extra strawberries can't hurt either. Will make again.

Honey Cornbread

Delicious, light cornbread. The texture is great and it is not too crumbly like other recipes. I substituted whole milk for cream. I will be saving this to use again.

Fragrant Autumn Vegetable Soup

Cream of Asparagus Soup II

This was good. I used vegetable broth instead of chicken broth and crema instead of half-and-half. Next time I would puree some of the asparagus and add it to the soup.

I tried reviewer Cassandra's adjustments, which included brown sugar, cinnamon, vanilla, and applesauce instead of oil. I would say this is a solid recipe, but pretty bland and messy. I don't know that I would make this again.

Quick Eggplant Parmesan

This dish is unbelievably easy and good. I also sliced my eggplant into thinner slices. After I coated the eggplant in bread crumbs, I dipped it in the egg and then the breadcrubs again. Serve over a bed of pasta and everyone will be impressed.

Chicken Spaghetti Casserole I

This was very good. I used cream of chicken instead of mushroom and vegetable broth instead of white wine. I added more chopped peppers instead of pimentos (yuck.) Will definitely make again!

Banana Nut Oatmeal

I substituted maple syrup for honey and wheat germ for flax seeds, but this recipe was delicious anyway. Not too sweet and a great way to use ripe bananas. I will definitely make often. I also cooked it on the stove and stirred the bananas right in. Even my 1-yr old liked it.

Carla's Fruit Dip

I made this for a party using 8 oz strawberry cream cheese, 8 oz extra creamy coolwhip and marshamallow fluff. It was delicious and everyone loved it. This combination stuck to the fruit well.
