Coconut Shrimp I
We used 1/2 cup flour mixed with 1/4 cup corn starch and added onion powder, cayenne and paprika. Then divided it for use. We LOVE this recipe!!! We use the batter, minus the coconut for other beer battered foods.

Pumpkin Parfait by Jo
This was AWESOME!!! I've made it twice now. The first time I followed the recipe because I believe in following a recipe before making revisions. The second time I made it I used Ginger Snap cookies instead of Graham Crackers and used pumpkin ice cream from a local dairy farm instead of vanilla. Since I thougth it might be over powering in flavor (due to the pumpkin ice cream) I omitted nutmeg and cloves. This was WONDERFUL!!! A taste sensation!

Tater Tot Casserole II
This is a great recipe with the following modifications: 1. I also used an extra cup of Sharp Cheddar Cheese. 2. I used Cream of Chicken soup instead of the mushroom soup. 3. I added some shredded rotisserie chicken to the soup mixture (we need meat in order to call it a meal) along with a medium onion diced. 4. I didn't have French-fried onions, so I crumbled cheezits and sprinkled them on top after it had already baked for 25 minutes. ENJOY!
