Coffee Bonbons

These were ok. I didn't taste the coffee flavor, and I used a known brand of coffee too so that disappointed me. I thought the 'glaze' was too thick more like a frosting which is fine but I tried piping it on and that was a pain, and it wasn't as sweet as I had expected.

Salsa Chicken Rice Casserole

This was a hit at my house. I made extra rice (2c uncooked brown basmati & 4c water) also I cubed & sauteed the chicken with onion and I added garlic(I don't like to boil chicken). The only other change was to use a can of cream of celery in place of cream of mushroom, I didn't realize that I was out of that. I didn't know what to expect with not seasoning but the flavor was surprisingly good considering - we'll have this again!

Chicken Spaghetti

I thought this was pretty good but DH & son really liked it so since their votes are higher I rate it a 5. I thought it needed more flavor; I made it as written using whole wheat spaghetti, and I added extra celery too (doubled), but that's the only changes I made. I'd like to add some seasoning next time.

Orzo Ham Salad

I loved this. I made it very close to how it's written. I used whole wheat orzo, and I used a packet of Equal for the sugar. I accidentally used about double for the cider vinegar due to carelessness and I was really worried that I ruined it but it did not taste too vinegary at all - phew! (ya I know you're not supposed to measure over the bowl, I was in a hurry!!) We'll have this again!

Impossible Coconut Pie I

YUM!! This is delicious - I made it just for me though; everyone in my house either doesn't like 'custard' desserts or doesn't like coconut so that just means more for me! lol This was so easy to make too, I'll make it again for my friends & myself.

Butternut Squash Casserole

I loved this!! No one else in my family likes butternut squash so I got to enjoy it myself which is fine by me, this was so good and different. I usually like butternut squash just plain but it was nice to try something different. The pineapple added such a nice and unexpected flavor. I used 5c squash like Ivy commented on and used the amounts listed for rest of the ingredients - I will definitely have this again. (I froze 1/2 of the leftovers for another time for myself)

Herbed Corn

10 stars!! This was so good I used one good size bag (forgot to notice how many ounces) and it measured about 8c, so I reduced the butter to 5tbsp but kept the seasoning the same. Everyone really loved it!! I will definitely have this again!!

Pork and Pepper Stew

This was a hit with all of us, everyone loved it! I didn't use bacon grease though - I would have if I had cooked bacon recently but I hadn't, and I wouldn't use 1/4c though - we used a little olive oil to brown the meat. We didn't make many other changes - I didn't get any jalapeno peppers, I forgot them, so I used 1/2tsp crushed red pepper flakes for some heat. Also due to a misunderstanding DH added the whole can of paste, not the end of the world :) At first it seemed that it was going to be way too thick, but the 'broth' was plenty as it cooked. I served over brown basmati rice, delicious!

Ham Cheddar Chowder

This was pretty good, DH didn't love it but said it was ok. I followed the recipe closely. I used everything it called for plus a couple of additions: I used whole wheat flour for the flour like I usually do, and I added corn and garlic as other reviews had commented on. I think I expected it to be more flavorful but it could have used a boost for flavor.

These are yummy! My boys really love them. I added rice crispies as someone else had commented on, and like they said I needed more white chocolate to coat them but it was worth it because they were so tasty! They're tough to handle (tried making some into ghosts too, that was challenging!) but do-able and worth the efforts!

Egg Free Chocolate Chip Pumpkin Cookies

These are really good. I did make a couple of slight changes - I used half whole wheat flour. I added 1/2tsp clove & nutmeg too which went really good with the other flavors. I dipped these in a warm frosting which gave them a nice light coating - everyone loved them!

Pumpkin Cookies with Penuche Frosting

I needed a stiff frosting for another recipe and used the frosting from this recipe - I dipped my cookies while it was still warm and it worked out great. It's very sweet, but if dipped you can get a thin layer on the cookies which is just perfect. I'll make it again (and the cookie part too!)

Slow Cooker Thai Pork with Peppers

YUM!! Delicious!! I followed the recipe very closely - I used chunky peanut butter, and used half the crushed red pepper flakes. I liked the chunky peanut butter in this very much, and I probably could have added another shake of the crushed red pepper but my SS doesn't like anything too spicy so I have to be careful of that. This was a great quick meal to set up, perfect for when the football game is on in the afternoon :)

Sally's Spinach Mashed Potatoes

These are delicious! My DH isn't a fan of mashed potatoes but even he really liked these. I followed the recipe exactly except for mixing half the cheese with everything else and topping it with the other half. My only comment is that these are a bit wet and soupy - I'll probably reduce the butter & sour cream by half next time, but we will definitely have this again!

Steakhouse Wheat Bread for the Bread Machine

Yum! I followed the recipe exactly regarding ingredients, but I made it by hand into dinner rolls - these are delicious! Everyone liked these! I was interested because of the different ingredients, they work really well together - I'll make these again!

Glazed Apple Cookies

These are delicious! The only thing I changed was to use 1/4c shortening and 1/4c butter to get the benefit of taste along with the benefit of texture :) My son really loved these too, DH liked them a lot but he's not a cookie fan usually. I piped the icing on from a baggie with the corner cut, I found that to be an easy way to ice these. We'll have these again!

King Ranch Chicken Casserole I

This was really good, we all liked it. I made it according to the recipe, no changes. It's quick & easy, always something I appreciate! My DH just didn't care for the chips on the bottom. Next time I might try torn tortilla wraps instead as someone else had mentioned.
