Seafood Soup

Reviewed: Nov. 23, 2010
This was delicious!! I don't have the lobster base, but I found shrimp cubes by Knorr. Other than that I followed the recipe, didn't alter any of the ingredients (using chicken broth instead of clam juice, son's preference) and to make it more complete I added cubed potatoes, onion & celery which I boiled in the broth while cooking the rest in a larger pan (can't get the creamy part to boil to cook the potatoes) and it was a huge hit with everyone!! Thank you mominator for such a great recipe!

Chicken Cacciatore with Chorizo

Reviewed: Nov. 22, 2010
This was so good!!! We all loved it! I used whole wheat flour, and served over whole wheat shells, and that's the only slight variation to the recipe, I followed it to a T otherwise - awesome & delicious, and we'll have this again! Thank you for an excellent recipe Sarah!! (oh we chose not to add cayenne, SS not a fan of too spicy)

Creamy Broccoli Soup

Reviewed: Nov. 17, 2010
Excellent! And easy - great combination imo! Didn't change a thing, except we doubled the recipe. Served with "Soft Garlic Breadsticks" - we will make this again!

Chicken Florentine Casserole

Reviewed: Nov. 16, 2010
We did like it, I liked it more than DH tho, he felt it was bland. I followed the recipe closely, I did use less mozzarella & bacon bits but that's the only difference. I think it was the right call for the mozzarella, but not on the bacon bits - it seemed I used a lot but the taste wasn't as much as I thought it would be. I'll try this on a weekend when I have time to use real bacon, I'm sure that will make a big difference!

Apple Cinnamon Oatmeal

Reviewed: Nov. 15, 2010
I made this mostly because my son has the instant nearly every day so I thought he'd like this but he didn't care for it. I thought it was good, but I don't have it as often as he does. I'd give it 4, he'd give it 2 so I'm settling on 3 stars. It was easy to make, but I just don't know what I could do to improve it for my son to like it better. I always look for homemade versions of stuff they have regularly but this just didn't work for us, I'm sorry.

Soft Garlic Breadsticks

Reviewed: Nov. 15, 2010
Love these! The only modification I did was to use 2c w.w.flour and 1c bread flour, all else the same (well did by hand vs bread machine). The dough was heavy but worked together really nicely. I couldn't imagine it coming out light but they really did and they're very tasty too!

Cajun Chicken Pasta

Reviewed: Nov. 12, 2010
Yum! We all loved it!! I followed the recipe very closely - but did use a can of evaporated milk instead of the heavy cream. the 'sauce' was perfect using that! Also we used 1lb w.w.penne pasta for four of us, and there was plenty of liquid for that much pasta (can of evap milk = 12oz vs the 8oz cream). Also used more cajun seasoning (4tsp) for 2 large chicken breasts that I cubed. All else was as written, and we're definitely going to have this again!

Sausage Pasta

Reviewed: Nov. 11, 2010
Excellent! I followed the recipe very close - I did use 1lb pasta though. The flavor was fantastic, DH & DS really loved this as much as I did. It was a little brothy but we didn't mind. I bought sweet sausage, and used a can of dice tomatoes with green chilies, a brand I never used before - so one of these ingredients were much spicier than usual, either the sausage was marked wrong & really wasn't 'sweet' or the chilies in the diced tomatoes were quite potent - we like spicy fortunately (SS not so much but he wasn't home). I had extra mushrooms and I wish I remembered to add some of them, they would have gone great in this but there's always next time :)

Chicken Stew with Dumplings

Reviewed: Nov. 10, 2010
This was very tasty, everyone really liked it. I never made dumplings myself so I was concerned, but they were very good. I did use 1/2 w.w.flour, but they were still so good! I am going to make this again! I always add celery seed to chicken soup, and I think that would go nicely in this, so I am going to try that next time only because it's what we got used to, but the flavor was not lacking with this recipe. (oh and we used broccoli instead of peas - DH hates peas)

Scottish Shepherd's Pie

Reviewed: Nov. 10, 2010
This was excellent! My DS & SS & I really loved it, my DH liked it (not a fan of mashed potatoes if you can believe that!) but the flavors were so great together. The bottom was quite wet, the ham let out a lot of liquid. I had used 1 can of regular corn and one can of the creamed corn. I also put a layer of leftover shredded cheese over the ham before adding the potatoes, about 1c, I wanted to make sure my DH liked it lol. We didn't broil it though, although I'm sure that would have been a nice touch - we got a late start making this and we were all too eager for supper to wait for it to broil :) Oh and I added minced onion & parsley to the potatoes when I whipped them - yum!!

Mexican Lasagna Rollups

Reviewed: Nov. 9, 2010
Delicious - we loved this! takes some time to make but now and then I can't only make quick meals :) I had to use up some sour cream so I took advise from another review and used that in place of the cottage cheese (DH hates cottage cheese although he may not have detected it if I had used it) I made 12 roll-ups and carefully divided the mixture over them, they weren't too skimpy. I didn't change anything else - the quantity of salsa & salsa con queso were just right and I'll definitely make this again. I served with brown basmati cooked in beef broth - yum!

This cake was surprisingly good, I'm glad I made it! I followed the directions, and chose not to add the almonds, although I did add the almond extract.

Stupid Hot Dog Thing

Reviewed: Nov. 2, 2010
This really wasn't bad. Everyone else in my family really liked it more than I did. My main issue was more about texture than flavor. The flavor was much better than I expected - and to have something that my step-son enjoyed was nice for a change. We followed the recipe closely to get a good idea of what we thought about it. We did use only 3c milk, and whole wheat pasta, but that was the only changes we made. We cooked the macaroni for only 5min separately then drained & added to the cheese mix to let the pasta finish in the mix and absorb some of that liquid & flavor. I would suggest using a flavorful tomato sauce to give it more flavor, I think that's why my guys enjoyed it as well as they all seem to love pasta. I would really like to use half the velveeta and 1c shredded cheddar next time and see how that affects the texture. Also I would really love to brown onion, peppers & garlic with the hotdogs. We'll have this again, it is quick and the guys enjoyed it.

Apple Banana Cupcakes

Reviewed: Nov. 1, 2010
These are so good. With so many ideas in the reviews I decided to follow the recipe closely to help me dedice what we'd like best. It's true, the banana flavor is subtle, we might have liked more banana flavor but we still really liked these and I'll make them again. I did use 1/2 ww flour, that's the only change though, and I'll try more banana next time.

Kielbasa and Veggies

Reviewed: Oct. 28, 2010
Awesome! I used a little less butter, and should have used even less, but it's delicious and easy, just have to wait for it. I did cover it tightly with foil, yet it still needed more than 50min for the potatoes to cook. I cubed them (out of habit) and thought they'd definitely cook in that time at that temp but they needed another 15min. I might try slicing them thin next time - and I added a little Old Bay on top too as recommended by the recipe submitter in her review, we liked that additional flavor as well. Oh and of course I added garlic :)

Ground Turkey Noodle Bake

Reviewed: Oct. 26, 2010
Outstanding! We all loved this - it reminded us of lasagna. I used 1lb of turkey, and extra sauce too - my dh loves pasta saucy. Other than that we followed the recipe, well except we topped this with shredded sharp cheddar, our personal preference but we're definitely going to have this regularly! YUM!

Baked Chicken Nuggets

Reviewed: Oct. 26, 2010
These were pretty good in my opinion but really good in everyone else's opinion so that works for me :). I liked that they were baked though. I only had regular bread crumbs so I added italian seasoning in addition to what the recipe calls for. I baked them on cooling racks too, they didn't get quite crispy but they weren't soggy either. We'll have these again.

Buttermilk Wheat Bread

Reviewed: Oct. 25, 2010
This was fantastic! I made buns using this recipe (for slow cooker italian beef for sandwiches) and they were perfect! Delicious, light, tasty! I did as many others suggested, used 1-1/3c whole wheat flour and 2c a/p flour. we ran a 'quick' errand while i left it for a 2nd rise, and we took longer than expected which made me nervous but they were fine - i might have to let them rise longer next time too, well see, but we're defintely having these again!

Slow Cooker Italian Beef for Sandwiches

Reviewed: Oct. 25, 2010
So delicious! Everyone loved this, and it's so easy! I originally was going to slow cook a roast with another recipe, and already planned to add diced pepper & onion so I still added them to this and it was great even though they're not necessary, the flavor was just so great! I was tempted to use another italian dressing package as many suggested but with so many other seasonings I decided to try it with only the one and it was plenty. We will definitely have this regularly!
