Double Layer Chocolate Peanut Butter Pie

This pie was perfect! I used a home made pie crust instead and cut the chocolate pudding mixture to one box instead of two... it yielded the perfect amount to fill the rest of the pie. From reading previous reviews, I was almost tempted to use a whole 8 ounce package of cream cheese, as I am a complete cream cheese lover.. however, I am glad that I didn't and stuck to the recipe - otherwise it would have overpowered the peanut butter. I also didn't have any peanut butter cups to top it with but it still tasted fabulous without them.... It is one big peanut butter cup itself!

Kay's Shortbread

So very easy & absolutely delicious! I followed the suggestion of a few previous reviewers and added a bit more confectioners sugar than called for. I also only lightly sprinkled the top with the white sugar. The sweetness of the cookies were perfect... Not extremely sweet but also not bland. And the ingredients are so basic, that you are most likely to have everything on hand already! No more store bought shortbread for us!

Chicken a la Camille

Did not have italian seasoning so took Reviewer AFEESER's suggestion in making some. It was very tasty. My boyfriend liked it & we'll definitely make it again!

Southwestern Roasted Corn Salad

Tried this for dinner tonight as a side to bbq chicken and it complimented each other well! I did have to alter it a bit, though. I used canned corn & frozen bell pepper strips, which I tossed with some chopped white onion (didn't have red) & 1 tbsp olive oil. Baked it on a baking sheet for about 25 minutes. Cooled it & mixed with chopped cucumbers, a dash of red pepper flakes, & dressing from recipe (minus cilantro because of not having any) and chilled. It was still amazing! Corn salad with a bit of an extra kick! A new favorite! Thank you!

Easy Pineapple Cake

Wonderful! I didn't have crushed pineapples but rings instead.. so I crushed those up myself. I reserved about 1/4 cup of the juice, which I originally planned to add to the frosting but found that the frosting was perfect as is. Instead I brushed it over my cake with a pastry brush after baking. I found that my cake was done sooner than the recipe stated... I took it out as soon as it turned a dark brownish color on top, which scared me at first as I thought it had burned a bit but it was perfect! The cream cheese frosting & texture of the cake reminded us a lot of carrot cake. It was absolutely fabulous & will definitely make this one again!

Ashley's Chocolate Chip Cookies

I tried out a batch of these cookies yesterday and they are already completely gone! Everyone loved them! I followed the recipe exactly .. it reminded me of a mrs. field's cookie... very soft and chewy - just the way I like it! I had no problems with the recipe & will definitely try them out again. Basic Crepes

I had lost my crepe recipe long ago and was delighted to find this one! I tried it out this morning adding the 1 tbsp sugar and 1 tsp vanilla and they came out perfect... just like I remember. The only thing I do differently is coat the pan with a tiny bit of butter before pouring each serving of batter into it (instead of using oil). Filled them with strawberry jelly and topped with powdered sugar. Too perfect! Thank you!

Orange Cream Cake I

I was excited to find this recipe as my Aunt used to make a version of this when I was a child. However, upon making it I've found that I had to improvise a bit to get it the way I had hoped it would be. I used a vanilla cake mix as suggested by other reviewers & agree that the presentation of the jello stripes looked very nice! As for the topping, I wish I had omitted the jello packet, or maybe just used half of it, because it was way too overpowering, sweet, & artificial. I ended up mixing an extra box of pudding, an extra envelope of dream whip (which I had already substituted one envelope for the whipped topping) & when it was still too sweet, I mixed in an 8 oz block of cream cheese which seemed to do the trick in making it "dreamsicle" like. It went over well and I would make it again but next time I would go easy on the jello in the topping or omit it all together and add some orange extract.

Tofu Parmigiana

I just made this for dinner & it was amazing! I am always looking for new ways to prepare tofu & this recipe is definitely a keeper. I didn't have any breadcrumbs on hand so I made my own. I had a little trouble getting them to stick, so I will try the cooking spray suggestion next time. Other than that, I added a small can of sliced olives & it came out perfect! Thank you!

Chocolate Cupcakes

I decided to make these cupcakes after a late night snack attack but wasn't too impressed with the results. I followed the recipe exactly except for adding a few chocolate chips to them & having to bake them a bit longer than stated & they came out a little on the dry & crumbly side. I frosted them with "Fluffy Peanut Butter Frosting" from this site & they tasted alright as a snack, but I wouldn't give them to anyone or use it for entertaining.

Snickerdoodle Cake I

Wonderful taste and super easy. I added a teaspoon of cinnamon to the batter & substituted butter for shortening. I also took another reviewer's advice and poured a little butter over it after baking. It really does come out like a coffee cake, which kind of surprised me as I guess I was expecting something a little different. But still very delicious nonetheless!
