Potluck Eggs Benedict

This was easy to make and fast and it is still in the fridge-it makes a heap, maybe 12 servings or so? I served it over roasted breakfast potatoes instead biscuits. I also used powdered consumme instead of the broth because it is all I had so that would have been a cup less liquid. The only thing that would have made it better would be cheddar cheese, which is very difficult to get where I live *not in US*.Had to use this cheap white mixed cheese instead.

Pumpkin Cheese Bread II

I made the changes that I always make to bread/cake recipes....subbed applesauce for the oil and whole wheat flour for the white flour. I also used low-fat cream cheese. For the pumpkin pie spice I mixed allspice, more cinammon, and nutmeg. I really liked this bread but the cream cheese didn`t have that little zing that I like about cream cheese. I will make this again but will just make the bread and then spread the cream cheese/orange peel mix on after it is baked.

Old Fashioned Chocolate Cake

this came out a little fudgy for me which was commented on and raved about by all my friends. i skipped the cinnamon, used cream instead of buttermilk and used a different frosting though I am sure the pecans would have been delish. i think i want to have a few different awesome choco cake recipes and i will rename this one Fudgy to remind me:)
