Incredibly Cheesy Turkey Meatloaf

think ground turkey dry? think again. one word=cheese! Very moist and full of flavor. I used plain breadcrumbs and added my own spices: oregano, thyme, rosemary, garlic powder, and basil. for cheese I used cheddar and monterey jack. Hubby loved it, but I have to say that my 2 1/2 did not. I give it 4 stars for that reason, plus the high-fat factor. but we'll definitely make this again. Very good.

Ground Turkey and Hominy

Thick like a chili, chunky like a stew. Tasted much better than I anticipated. Lightening fast too. I added a 1/2 cup of pureed cauliflower and about a tablespoon of sour cream. Could use a bit more salt. Tasted great and very filling.

Apricot Orange Bread

To combat the dryness other reviewers reported, I used 1 1/2 cups of mashed fresh apricots instead of the dried. Which made it very moist--almost too much so. I also omitted the choc. chips. Next time I would use only 1 to 1 1/4 cup of fresh fruit & add cinnamon or another spice to give it a bit more depth. With all of the fresh fruit, the OJ was somewhat overpowered.

Old Fashioned Peach Cobbler

Takes extra effort to make, but it's well worth it. Pastry was flaky and tender (I used butter-flavored Crisco), and I agree with the previous reviewer--don't leave out the OJ and lemon! It adds a hint of bright citrus flavor that wonderfully complements the spicy nutmeg & cinnamon. In a word, delicious!

Stir-Fried Chicken With Pineapple and Peppers

Quick & easy. I had everything on hand, so it was a snap. It was a bit sweeter than I expected though. Perhaps more ginger would help with this. All in all a good recipe that I'd make again.
