Pumpkin Pie (Wheat-Free, Egg-Free, and Dairy-Free)

Haven't tried it yet, but can't get my question asked without rating the recipe (-: Kate, Do you use potato flour or potato starch in your homemade GF all-purpose flour mix? Just starting to bake GF and have read that potato starch is better, but don't know why. Thanks.

Omelet in a Mug

Not sure why, but this didn't work as well for me as it apparently did for everyone else )-: I used 2 whole eggs and a couple of teaspoons of milk in addition to some cheese, chopped mushroom and red bell pepper. When I went to stir it after microwaving 1 minute, it was cooked on the bottom and sides without enough uncooked egg to really stir it. I stirred it anyway, which broke it up, added the cheese and cooked it for 30 seconds more. It tasted good, but the texture was kind of rubbery. I might try it again using lower power. I really wanted it to work because it is so fast and easy.

Mimi's Zucchini Pie

We were disappointed in this crustless quiche. It was "bready" instead of "eggy" and kind of dry. My other crustless quiche recipes include milk and some type of cheese in the mixture, which makes it more moist and creamy. We tried.

Brilliant Sauteed Broccoli

I didn't make the recipe so I was not going to rate it, but the site wouldn't let me send this comment without selecting a rating. Sorry about that. You can achieve the same result i.e. keeping the broccoli green and crisp by microwaving the broccoli to the tenderness you want and immediately rinsing it in a colander with cold water. Allow it to drain in the colander and refrigerate until you are ready to use it. The recipe sounds like it's worth a try.

Marinated Grilled Shrimp

Finally, a recipe I had to rate! At first bite, my husband and I looked at each other in happy amazement. The marinade thoroughly and deliciously flavored the shrimp (I marinated them for about 2 hours) and the hickory charcoal just added to it. I made 12 large shrimp (1 lb.), cut the oil to 2 T. and used dried basil. Took a chance and used the full 1/4 tsp. cayenne - perfect! I would make at least half again the amount of marinade for 2 lbs. of shrimp. Thanks for a most delicious recipe, Blondieperez! I'm going to try the marinade on chicken breasts.

Cottage Cheese Pancakes

I've been making these for years using 1/4 cup whole wheat flour instead of the 1/3 cup white. Everyone is surprised that they taste so good, even those who hate cottage cheese! Great plain or with a bit of orange marmalade or jam. My only indulgence is to butter the griddle a teeny bit. Delicious!

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

Exotic and delicious. I used a large fresh yam and 1/2 can diced tomatoes. I left out the onion and garlic powder since the "real things" were already in the soup, and cut the cinnamon to 1 tsp. Even better the next day for lunch.
