Glorified Gingerbread

Seriously? The cake part was ok but the combination of the spices seemed to not be quite right and tasted weird and left a bad after taste. The topping stayed dry and did not turn into a crunchy topping so every bite of this was like eating cake with sand on top, gritty. I may experiment and use all the ingredients together and add more liquid to get a cake without the dry topping but I'm not sure I care for the taste of this enough to try it again.

Double Layer Pumpkin Cheesecake

I love this recipe! Most pumpkin cheesecake recipes I have tried turn out to be pretty much like regular pumpkin pie, very dense and very pumpkin which my husband and I don't like. This recipe was awesome! It is creamy and the pumpkin and spice is very light and not overwhelming. I will be making this again and I am actually going to make a couple of them for gifts for the holiday.

Fried Corn with Smoked Sausage

This was really good! The only thing I did different was I added a small fresh chopped tomato from the garden and left out the MSG. My husband wasn't real fond of it but I really liked it. I'll definitely make it again. Its easy and fast.

Jay's Signature Pizza Crust

This is the best pizza crust! I use this recipe all the time and threw out the recipes for crust that I had used before. The only thing that I add to it is about a tsp of Italian herbs to the dough mixture.

Porcupine Meatballs II

My mother made these meatballs for many years and I've continued to make them over the years but we do it a bit differently. You definitely need an egg and some seasoned bread crumbs to bind the meat/rice mixture. I always cook some bite sized pieces of carrot and potato in water, drain off part of the water when the vegetables are done. I use two cans of tomato soup and add to the vegetables along with some chopped onion. Heat thoroughly and then add your cooked meat balls to the stew, heat and serve. Yummy!

Irish Soda Bread I

This is really good. Its not traditional Irish Soda Bread and is more like a quick bread and cake like as others have mentioned but the taste is excellent. I didn't quite have a full pint of sour cream on hand so I topped it off with probably about a half cup of milk and it still turned out excellent. Watch this bread closely while its baking as 60 minutes could be too long depending on your oven. I checked mine at 50 minutes and it was done and just on the verge of becoming overdone.

Black Pepper Beef and Cabbage Stir Fry

I LOVE this recipe!! My husband who is a picky eater even likes it. We like it so much that I fix it nearly once a week for dinner. We're not huge garlic fans so I cut way back on the garlic. I also add green onions sliced in about 1 inch pieces. This recipe is so easy too.
