Blackberry Syrup

I used 2-1/4c. Of sugar and it turned out amazing! Also, fresh berries, strained the seeds out. Used a tiny bit of gelatin to thicken, about 1/8 to 1/4t.

Curry-Strawberry Chicken

I made significant changes, but it was such a great combination to begin with! We loved it. I used fresh strawberries instead of preserves, about 3/4 of a pint. blended them up with all the rest of the ingredients. I used Italian dressing on hand, so I used that instead of the Russian. Also, I used a whole packet of the dry onion soup mix. Also, I only used one very large chicken breast, a large red bell pepper, and some red potatoes to make it an all in one meal. It fit in a 9 x 9 and would feed 4. just cooked till the potatoes were done. oh, delicious!

Pierogi (Polish Dumplings)

My grandmother always used to make these for special occasions. We always fry in a little bacon grease after boiling, and serve with crispy bacon. oh, so good! I added cheddar cheese and garlic in the mashed potatoes. For those whose leaked into the water, the dough needs to be the right consistancy. When sealing, wet just the inside edges that you are pressing together to make it stick. if more of the dough than that gets wet, it may get too stretchy and break open. I had a hard time with the sauerkraut filling till I mixed a little mashed potatoes with it b/f stuffing. Then all was well.

Death By Chocolate II

I make this often for large get togethers and everyone loves it! I use Kahlua flavored syrup in the chocolate cake after it is baked and crumbled. I also skip the candy bars & almonds. I wipe the inside of the bowl with a paper towel after each layer to give a cleaner look.

Simple Scones

This is a great basic recipe! I used whole wheat pastry flour, half the butter, and 4 T applesauce. It was pretty sticky, so I dolloped them onto the parchment paper like biscuits. :-) Also tried the variation of lemon and blueberry. one container of fresh blueberries, 1.5 t. dried lemon peel, 1/2 t. lemon extract. Great flavor and wonderful consistency.

Italian Fried Eggplant Balls

I steamed & processed the eggplant with a couple cloves garlic and chopped onion. Added bread crumbs from three pieces of toast instead of flour. 2 eggs, didn't have pepperocini. added a little powdered potatoes and cheddar cheese. I also added red pepper flakes, cumin, and curry, like another user suggested. Next time I'm going to try pan frying in little cakes. My husband said it sounded gross, but then after dinner, asked to take the leftovers to work. : )

Stuffed and Wrapped Chicken Breast

my husband loved it! I have used both turkey bacon and real bacon, both good. I use regular onion chopped up. Also add some white pepper and mrs dash (garlic & herb), and dill since we like very flavorful food. oh, and some jalapeno too for a little kick.

Chicken Roche

I added canned spinach and used jamaican jerk seasoning since i didn't have any cajun. I also used a jamaican marinade on the chicken. added some celery too, and used kidney beans cause thats what I had. soooo good! served over brown and wild rice.

ooh. this was good with a couple additions. i added curry, cinnamon, a tiny bit of ginger, some basil, three heaping tablespoons of sour cream, and the same measure of brown sugar. i also doubled the recipe and used half the amount of potatoes. oh, and garlic sat. yummy! : )

Gooey Bars

I make this all the time and my friends love it! lots of people ask for this recipe. yes, it sticks to my teeth, but that's what sweets do. I sometimes make a half recipe in an 8x8 pan with a cupcake mix that is half the size of a cake mix. I also cook it a little longer so the topping isn't as gooey (I am paranoid about cooking the eggs through) and with a little brown on top, it makes for an almost marshmallow top.

Spicy Ginger Mahi

mmm. very tasty. I added 1 tablespoon of Thai Chili Sauce to the glaze because we like a little spice. I also marinated it longer, about an hour, and I baked the fish for 20-25 minutes at 400 degrees in our toaster oven. I spooned just a little extra marinade over the fish before baking. it turned out moist and perfect. I also made a little extra glaze for a bed of white basmati rice.

Garlic and Tomato Tilapia

mmm. I used cream cheese instead of sour cream, and I didn't have tomatoes, so I used a little salsa and some taco sauce, roasted garlic, and sun dried tomatoes. I also added basil, oregano, a little cayenne pepper, and dill. I also put in some seasoned rice vinegar to make more sauce. I served the fish & sauce over pasta with cut up fresh bell peppers.

delicious!!! it was too salty, but that is easily remedied by cutting out the garlic salt and adding minced garlic. the flavor was amazing besides that. we like things a little more spicy, so i added some thai chili sauce. yum!

I always like more spices... so I added white pepper, marjoram, garlic salt, 2 cloves of garlic, and sage. very tasty. I also added more potatoes, bell peppers, and water. I will definitely make it again! THX!
