I steamed the eggplant and then used a food processor for it and roasted garlic, and chopped onion. I also added some cheddar cheese, two eggs instead of one. Also put in some red pepper flakes, cumin, and curry, like another user suggested. Very tasty. My husband said it sounded gross, then after dinner, asked if he could take the leftovers for lunch the next day. :-) next time I'll try pan frying in little cakes. Great recipe!
