Quick and Easy Chicken Noodle Soup

Reviewed: Jul. 10, 2010
My family could not get enough of this! I used a rotissiere chicken that was seasoned.....ummmm! Next time I will double the recipe so there is enough. Just be sure to add the noodles after all of the vegetables are tender, so they do not get mushy. Enjoy and God bless!

BLT Bow Tie Pasta Salad

Reviewed: Aug. 16, 2008
Wow! I was looking for a pasta salad that wasn't your average boring chicken salad - and this was it! It was just wonderful. A few quick changes I made: use spinach instead of romaine as it lasts much longer with minimal wilt, double the sauce and omit the water. Otherwise follow it to to a tee - you won't be disappointed. Everyone has been asking me for this recipe. Still deciding whether or not I should share it! :-) God Bless!

Brownie Caramel Cheesecake

Reviewed: Jul. 25, 2008
This was a fantastic cheesecake! I even used a gluten-free brownie mix! (The Gluten Free Pantry mix - got it at Walmart Supercenter for much cheaper than the health food stores). I followed the directions on the box, and baked it only 15 min (as my oven bakes slower. 10 min would probably be more accurate otherwise). I used about 2/3 of the mix as it was a larger box. Just baked up the rest in a very small cakepan. As per the advise of the others, I used 3 blocks of cream cheese, 3 eggs, and 3/4 c. sugar. I also waited to pour the cream cheese mixture onto the carmel layer until it had a chance to cool a while and was of a stiffer consistancy. I also let the cheesecake stand in the oven after I shut it off for 3 hours after the 40 min cook time. This really helps it to firm up with no browning or cracking. It was perfect! The one thing that I would have done differenty, is to wait until the cheesecake is totally chilled before removing the springform ring. I did not have this option, as I was needing to bring it with me sooner than expected. Over all a real keeper! Thanks and GOD Bless! :-)

Gooey Cherry Bars

Reviewed: Apr. 27, 2008
These bars are absolutely delectable! My neighbor and I crave them throughout the year! I happen to have a super sweet tooth, and double the frosting for these. (Most people find that a bit over the top). These are must have for my family at Christmas time, but great any time of the year!!

No Time to Cook Chicken

Reviewed: Mar. 21, 2007
With the right additions, this dish is GREAT (and then rates 5 stars). I used 2 cans of cream of chicken soup(it was whatwas on hand), 2 tsp. black pepper, 1/2 envelope onion soup mix, 2 tsp. seasoned salt, 1 tsp Montreal chicken spice, 1 tsp garlic and herb spice, 2-3 tsp minced garlic and 1 tsp. parsley. I cooked it up and added teh sour cream, and then served it over mashed potatoes. And then a miracle happened - My WHOLE family liked it! GOD bless!!!! :-)

Curly Noodle Pork Supper

Reviewed: Jan. 6, 2007
I make this dish a lot! I use a package of frozen stir-fry veggies with red pepper in it and only one seasoning packet to cut down on the sodium. If I don't have the green onions, I just omit them. My kids love it and will actually eat the veggies in this dish!! I ALWAYS use a pre-marinated mesquite tenderloin - it adds SO much more delicious flavor!! MMMMM!!

Cookie Salad I

A huge hit at all the family functions! My family prefers no fruit in it-just the sugary goodness! I use more crushed cookies and reserve several to garnish around the bowl. Simply FANTASTIC!!

It's right there in the name - AWESOME! I omit the turkey liver; not my thing. I also use sage or regular pork sausage; cannot often find the turkey variety. My absoulte favorite dish on the thanksgiving table! A+!

Mom's Stuffing Pork Chops

Reviewed: Nov. 15, 2006
My mother has made this dish for years and it's a family favorite!! We omit the water around the chops and put the stuffing directly on top - bake covered for 1.25 hours and then uncovered for 15 min. The stuffing keeps the chops moist and delicious!! WONDERFUL! Bon appetite!!

Awesome Carrot Cake with Cream Cheese Frosting

Reviewed: Oct. 30, 2006
My mother requests this cake for her birthday every year! This year, I followed some reviewers suggestions and added a pinch of allspice to the batter abd doubled the cinnamon. As I also thought that the cake turns out a bit too oily, I substituted 1 1/2 cups of cinnamon applesauce + 1/2 cup of the oil that was called for. My mom is diabetic, so I used 1/4 cup sugar, 1/2 cup Fifty50 fructose, and 1 cup Splenda. (You can't hardly even tell!) But, I have found that the tweak that really sets this cake off, is when I add cinnamon to the cream cheese frosting! It is the absolute best!

Good tasting frosting, but a bit thin to decorate with. Maybe next time I will add more powdered sugar.
