My guest enjoyed it. It was very close to the jerk I had in Jamaica.
I changed the ingredients a little- instead of using dried thyme I used fresh thyme and added more cayenne pepper and some scotch bonnet pepper. Also I used less cinnamon.
With that the flavoured was extra- ordinary!
