Chicken Wild Rice Soup

Very good!! Will definitely make again! I doubled the garlic and added about a 1/2 tsp of basil and a little celery salt & pepper. Also, I used regular brown rice because I didn't have any wild rice on hand.

Delicious Ham and Potato Soup

Delicious!! I doubled the ham and used 4 cups of potatoes. I also threw in a little parsley and basil. Much lower in calories than my original potato soup recipe but taste just as good!

Texas Ranch Potato Salad

I thought this recipe was very good and quick & easy to make! I didn't have green onions, so I added onion powder to the sauce. My husband is not much of a potato salad guy, but enjoyed this one!

Simple Whole Wheat Bread

I divided the recipe in half (18 servings) and made a 2 lb loaf in my bread machine. The bread turned out delicious! My husband and my 3 yr old twins loved it! I will definitely make again!

JENNIE-O's Best Ever Meatloaf

This is the only recipe I use for Turkey Meatloaf! I use onion and green pepper and I do NOT saute them prior to adding to meat. I just mix it all in a bowl and then put into pan. If it feels too wet, I just add some extra bread crumbs or some crushed cheese crackers. Sometimes I throw in some shredded cheddar cheese too.

Veggie Pizza

Delicious!!! I took this to a friend's party and it was gobbled up! I only put broccoli, red bell peppers and (matchstick) carrots on it. I also sprinkled the cream cheese mixture with a little cheddar cheese. The only other thing I did differently was that I used garlic powder instead of garlic salt...don't need the extra salt. I will definitely make this again!

Ten Minute Enchilada Sauce

Very good! This is the recipe I will use from now on! I used a regular sized can of tomato sauce (15oz) and pretty much doubled the onion powder, garlic powder and cumin, but kept everything else the same.

Peanut Butter Cookies with Chocolate Chunks

Delicious!!!! Peanut butter, oats and chocolate are the best combination. I will always make these instead of your "normal" choc chip cookie, from now on! The only change I made was that I used 1 cup of choc chips instead squares.

Beef and Bean Chimichangas

These have lots of flavor! My husband and I really enjoyed them. I only made a half recipe. I used half medium and half mild taco sauce and added about a tablespoon of taco seasoning. The only thing I wasn't real impressed with was the outside(tortilla), probably just because it's baked and not fried, which I'm sure is a bit healthier. Chimi's are one of my favorite things to order from a mexican restaurant, so it's hard not to compare. With that said, I'm sure I'll be making these again sometime.

Southwest Summer Pork Chops

The only thing I did differently, was marinate the pork chops for about 5 hours. These were good, but kind of bland. We ended up topping them off with more BBQ sauce for added flavor.

Asian Lettuce Wraps

Delicious!! Very similar to PF Changs lettuce wraps when made with chicken. The following are the changes I made: I used 1 lb boneless chicken breast, cooked and chopped, I used 1 tsp of ground ginger instead of pickled ginger and double the sauce ingredients, except for the sesame oil. I used 1T of Asian Chili Sauce. Also added about 8 small mushrooms, chopped. Will definitely make again!!!

Jay's Signature Pizza Crust

Very good!!! I added 1/2 tsp garlic powder and 1 tsp italian seasoning at the same time that I added the salt. I then mixed it in my bread machine. I will definitely make again!! *Second time making this I turned it into breadsticks. I added 1 tsp of garlic powder, 1 Tbsp of italian seasoning. Then baked for a couple minutes, removed them from the oven and pre-cut them, sprinkled with approx 1/2 cup of fresh parmesan and then baked again for another 7-10 minutes. Once they were done, I brushed them with garlic butter. They were delicious!

Slow Cooker Italian Beef for Sandwiches

As is, I give this recipe 4 stars. I made this with some slight changes and with them, can rate it a 5! I used a 3 lb roast and used 2 cups of beef broth instead of water. I also added some chopped onion for flavor. I doubled up on the basil and oregano and added a dash of red pepper flake. After shredding the beef, I added a tad bit more garlic and salt & pepper. I did not use a bay leaf at all. I served the beef on toasted hoagie buns with monterey jack cheese. Delicious!

Downeast Maine Pumpkin Bread

Delicious! I didn't have any cloves, so I left that out. I used 1/2 C oil and 1/2 C applesause (unsweetened), 2 cups white sugar & 1 cup brown sugar and added I added 2 tsp of vanilla. I'm not a big pumpkin fan, but this bread is wonderful, very moist!
