Strawberry Bread

OMG this was good! I followed the recipe with the exception of adding more strawberries. I used about two of those plastic containers (the kind of rectangle ones). Sliced most of them and sprinkled with sugar and set aside. The remainder I sliced and smashed up and then added to the batter with the wet ingredients. Folded in the sliced strawberries at the very end. I used the full amount of cinnamon and didn't find it overwhelming at all. I used pecans too. So good! I had to bake this for about 15 minutes more than the recipe stated in order for my tester to come out nearly clean. Well worth the wait!

Fluffy Peanut Butter Frosting

This is pretty good. It's fast and easy but it doesn't have the smoothest texture. There's another recipe I tried that adds cream cheese and I liked that one a bit better. I would make is again to use on brownies or as a sandwich cookie filling. Maybe between two banana cookies or something? Mmmm

Chocolate Ganache

Really good and really easy ganache recipe. Don't let it cool too long or it will be too thick to pour easily. Spread leftovers between two graham crackers, put in freezer and you have great little treats for kids.

Mid-Summer Italian Bread Salad

I really liked this. I doubled the recipe. I used 2 whole cucumbers even tho it amounted to more than the 2 cups required by the double recipe. Wasn't too much. I cut the bread in cubes and toasted @ 400 degrees for 5-7 minutes. Til just starting to get crisp. I think the bread would have been really mushy otherwise. I didn't combine the bread cubes with the rest of the salad until just before serving. I did not need all the dressing the recipe called for. Need to add salt and pepper. Will make again for sure.

Sesame Pasta Chicken Salad

Delicious so far! Just made it and put in the fridge. I used a whole rotisseie chicken, shredded. I added one red pepper, diced small, and one 8 oz package of sugar snap peas, cut into thirds. Added great color and crunch. Based on all the other reviews I'm expecting this to be even better in a few hours!

S'mores Crumb Bars

Really good. I love marshmallows so this was awesome for me. I think next time I would use 2/3 of the crust mixture on bottom and 1/3 on the top. So much of the top crust crumbled off, it seemed like a waste. So easy and fast. I refrigerated before cutting which made it very easy. Actually easier than making real s'mores!!

Frosted Banana Bars

Excellent recipe. Great banana flavor. Made in a 15x10" pan and they were a nice thickness. Served cold as suggested by another reviewer and it really did bring out the banana flavor. I frosted with Whipped Cream Cream Cheese frosting recipe from this site. An excellent combination with rave reviews! Will make again.

Best White Icing Ever

Very simple and delicious for cupcakes. I used half butter, half crisco. I also used milk instead of water and upped it to 3 Tbsp for a slightly creamier texture. Would need to double the recipe for a layer cake.

French Dressing II

Made as stated. This was good. I made this recipe so I could substitute Splenda for the sugar to save calories. Didn't notice any difference. I liked the chives and the smoky flavor. I used it in a chicken and rice recipe with great success. Would make again.

Cranberry Bars

These were really simple to put together and will make a nice addition to cookie trays for the holidays. If you can time it right, they would be great served warm out of the oven with a scoop of vanilla icecream. I feel like I want to drizzle them with dark chocolate but I was under strict orders from my husband to "leave them alone!" Would definitely make again.

Michelle's Peanut Butter Marbled Brownies

DEEEELICIOUS! I cut back the butter by a half stick based on other's reviews. They were sooooo good. Did I mention how good they were? All of them were gone in like 20 minutes. I didn't find them too greasy at all. Make these!

Cucumber Slices With Dill

I really liked this as an alternative to Cucumbers in Sourcream (which I love). The sweetness is a nice change of pace. I cut recipe in half and used Splenda. Worked out well and half recipe made enough, unless you have a really big crown of cucumber lovers.

White Bean Dip

I love this dip! I followed the modifications of another reviewer (1/2 lemon- juiced, 1 Tbsp chopped garlic, 1/2 tsp of crushed red pepper & sub 2 TBSP chopped fresh italian parsley for the cilantro)it's out of this world! I follow the WW Core Plan and this fits in great. It's the best served with homemade pita chips but is equally delicious with raw brocoli, celery and red pepper. I've already made this 4 times this summer!

Mexican Bean Salad

Excellent salad! I cut the vinegar and oil in half the second time I made it and that worked out better. Left everything else as is. If you use entire amount, there's just way too much liquid. It's a waste. I also subbed Splenda for the sugar. Makes the recipe 100% Weight Watcher Core Plan compliant!Everyone wanted this recipe!

Very Easy Mushroom Barley Soup

Delicious! Took another reviewer's advice and used a full cup of barley. You can always add some water when you reheat the soup if it's too thick. This would be good with some chicken added to it as well... Will make again for sure.

Hudson's Baked Tilapia with Dill Sauce

Excellent. Also made this with cod. I used way more cajun seasoning than called for. Just kind of coated the fish with it. Would not use additional salt next time as the cajun seasoning was salty enough. Really quick and impressive dish!

Tangy Sugar Snap Peas

This was OK, but has promise. I was dissapointed in the color of the dish after microwaving. Peas were not a real bright green and onions looked pale. I think I'd try sauteing the onions in olive oil, blanching the peas real quick then adding to the sauteed onions and coating with the sauce. Worth the try.

Cranberry Salad III

We absolutely loved this salad. I will be making it again for Thanksgiving. I did pour just a little more pineapple juice into the cream cheese mixture, but not much. The cream cheese layer is alot easier to spread if it's at room temp, or even warmed up a bit in the microwave. This fit perfectly in an 7 x 11" glass pan. Would need to double recipe if you want it in a 9 x 13". It's so good, I'm sure it would get eaten if you doubled it!
