Sandy's Chocolate Cake

Very moist, nice flavor. Sour cream gave it a bit of a tang. I don't usually like frosting, but this was quite good--worth the extra effort. However, the cake was really rich; I got way more than 12 servings, because pieces need to be sliced thin.

Spiced Apple Bars

These were nice. I used 1/4 wheat flour, and regular oats for fiber, and added extra apples--all fine improvements. But they need something for eye appeal, and confectioners sugar doesn't do it. I'll try to drizzle on maple syrup icing next time.

Hot Cross Buns I

These were very good, and not complicated. I used craisins instead of the currants, to good effect. This year (2008) I used the currants, and they were better. I got requests for the recipe from 70-year-old ladies at church, which to me is a high compliment.

Grilled Salmon I

No lemon pepper; used lemon juice. My husband--not a fish lover--thought this was great. I appreicated it using soy sauce but not tasting Asian--nice to see ingredients stretching themselves!

Big Al's K.C. Bar-B-Q Sauce

Very excellent. I didn't even use the liquid smoke, though I have to say I think it would have enhanced it. Also, it was a bit sweet for my tastes, so next time I would reduce the brown sugar. But that's the beauty of this recipe--the basic recipe is relatively simple, but creative, and allows for lots of personal adjustment.

Jumbo Breakfast Cookies

I used dates & walnuts in place of the raisins. My daughter, the non-breakfast eater, really liked the ease of these. However, they are a bit large for a child, so you might adjust size for younger eaters. Also, I found it to be too much peanut butter for my tastes. I'd pbly try to reduce it, or substitute.

Fine for what it was. Not sure the pumpkin/cheesecake combo is the best for us. You need to plan some kind of garnish for the top--plain looking.

I did not think these would be as good or as popular as they were. We were liberal with changes--no sunflower seeds, but used dried cranberries, dried strawberries, coconut, regular oats, and substituted strawberry nectar for the applesauce. But still, the kids & I both loved them. They were filling, and sweet enough for kids but not too sweet. Great texture. Easy to make.

Spicy Apple Cake

Could not believe how quickly this got eaten. I was worried it might be too much spice, but even my kids loved it. I agree about the cake being sweet, and not needing glaze for that reason; but it's kind of plain looking without it--needs something on top.

Basic Microwave Risotto

Well, who would have expected that? It's not quite so creamy as the old-fashioned loooooong cooked risotto, but it really does capture the essence of it. Big hit in our family, though I have to say, I used bouillion instead of broth, and it was too salty. I wouldn't do that again.

Pumpkin Cranberry Bread

Caramel Popcorn

Caramel recipe is good and simple. But it was way too much for us--made the popcorn too sweet. Once I doubled the amount of popcorn, much better.

Children's Gingerbread House

Hmm. You could find a better recipe. It was way too wet--I'm sure something is skewed in the flour amount, as others have said. And the design of the house is simple and works fine, but it could use much more particular instructions for first-time home-makers. I also got a few bubbles in the slabs of baking gingerbread, which I had to pierce, and had trouble getting the whole thing crisp without the edges being burnt.

Gourmet Sweet Potato Classic

Just like it says in the introduction, after trying this, my non-sweet-potato-loving husband said, "this is way better than with marshmallows!" A two-step process, but really not complicated. And I didn't have pecans, so I skipped them. I'm sure it would be better with them in, but everyone loved it anyway.

Quiche

Great! Really appreciated how quick it was. And as others have said, adaptable. I cooked it right away at 350 for 1 hour, and that worked well. I used colby-jack to suit family's preferences, and still tasted great. using milk instead of cream works wonderful and reduces a lot of fat. I will say that I put it in a 10" pie plate, and that was too big--the quiche was thin and didn't fill all the crust.

Bay Scallop Chowder

My husband, not a seafood guy, really grooved on this. I did have trouble with it looking a bit curdled, which I believe a previous reviewer had trouble with. I thought it was a little surprising to simmer it with the cream, since it oftens curdles--next time I would try simmering with the egg yolk, so it gets cooked, but then adding the dairy at the end and not letting it get to a simmer.

Crispy Fish Fillets

Wow, this was great. I used cornflakes, but I think panko would have been even better if I'd had any on hand. We used 4 oz. flounder fillets, not great in themselves, but tasted terrific with this simple coating. I did find that this wasn't enough mustard coating for my fish, so I would make more next time.
