Red Velvet Cake

I used 1c margerine and 2 cups of sugar and just a little bit less than the called upon flour and my cake turned out very good. I creamed and creamed and creamed the marg and sugar together (with the frosting too) but I missed the step about mixing as little as possible with the flour. I baked for 30 minutes. Cake was most, maybe a little dense. Will add extra cocoa next time for more flavor. Frosting was grainy, but I refridgerated it and mixed it more and it turned out good.

Added a little extra garllic salt, less white sugar and more brown sugar. Next time I would reduce the sugar a little...but its very very good!

Mom's Zucchini Bread

Angel Hair Pasta with Shrimp and Basil

This was pretty good, except my white wine was a little sweet. I doubled if not tripled the amount of garlic and had quite a bit of hot peppers and salt and pepper.

Lighter Banana Muffins

MMMMmmm, I make these all the time. They sure don't last long in our house. I use an extra banana, a little bit of skim milk (1/4 cup maybe) and lil bit of vanilla. I also substitute 2 eggs for 3 egg whites and splenda for the sugar. My husband hates all my healthy cooking, so I didn't tell him to after he ate lots of them and he was very pleasantly suprised. Oh yah, don't forgot the nutmeg and cinamon!

Whipped Shortbread Cookies

I was really scared to make these cookies as per all the reviews, but mine turned out fabulous (and not crumbly at all). I whipped the butter until it looked like frosting (about 3-5 minutes) and then added everything else and whipped for about another 2-4 minutes. I did add a little bit of vanilla (1/2 t). I don't have a Kitchen Aid, so I just used my handmixer! Don't be scared of this recipe, its very good!

Creamy Spinach Tortellini

Mmmmm so good! I used fresh spinach and sun dried tomato's and added fresh garlic and red pepper flakes. I didn't have tortellini, so I used rotinni! As per the other reviews, I used about 2/3 a block of low fat cream cheese and about 3/4 cup of milk! We will definately be making this again soon!

I usually hate Oatmeal Chocolate Chip Cookies but my sister made these for me and they were awesome! We used whole eggs and put in some chopped walnuts! Mmmmm
