About this Cook
Single, 41 Male. Seeking a cooking female companion for my big kitchen!
My favorite things to cook
Steak [beef, deer, buffalo, elk] Southern Gourmet. It's easy to do and people are impressed.
My favorite family cooking traditions
Steak with a mushroom sauce and baked potato.
My cooking triumphs
Steak. Chicken. Pork.
My cooking tragedies
Scrapple. But I kept working it until I "mastered" it. That's the key to cooking. If you fail, figure out what you did, and try it again. Gravy, too thick.

Chicken Andouille Gumbo
I think this is a great gumbo! I changed the vegetable oil to L-A-R-D and crisped some pork jowel in it for more flavor. I took out the pork jowel and just follwed the rest of the recipe. The lard and rendered pork jowel [rather than vegetable oil] is the bomb!!!

Tortilla Espanola (Spanish Tortilla)
I make this but leave it in the skillet after cooking the first side and then broil the other side about 6 inches away from the broiler. It is much easier to handle this way and looks real good in a cast iron skillet. DELICIOUS!
